Edit: There was a time I was considering giving April 20 to Amascut because of various tragedies and internet culture, but I thought it was distasteful. She's too old. Maybe she had a special day or two when she had a larger following but eh...

For Will, I knew I wanted him born near Halloween, it made sense to me when I was putting his character together and chose a date for him.
Charles and Jane each have dates from canon and real life which made that fairly simple.
Moist, William, Tumnus, the Pirate King, I haven't really thought about it for them.
Sameth's birthday has given me such headaches because its a key date in canon but canon is vague about timing. All the timing is done by in canon events and general references to the seasons, which is unhelpful. Saph and I discussed it and finally chose a date.]
Demeter's a goddess and again, I wouldn't know where to start with her.

Ingress' birthday of May 25 was picked because it's the halfway mark between my birthday and the original mun's birthday, and we thought that was nifty.
The others I am a bit vague on specifics... I think Bela is Sept. 12. She's a Scorpio.

River: August 9. When we were coming up on Academyplot back in 2005, I realized that I hadn't ever given her a birthday, and was coming up on a year since I'd brought her in, and that she was a character whose friends would have celebrated it. Mind you, I could have handwaved, but it seemed more fun to onscreen it -- especially since she was turning 19, and embroiled in a lot of Dark Tower stuff at the time. So I picked a date in the then-near future, and one with number symbolism involved, because 9 was a symbolic number for Milliways DT stuff.
Regan: Nope, or if I did pick it I've forgotten. It hasn't really come up, although obviously she has one.
Trowa: August 21. That's his current official birthday; neither he nor I have any idea what his actual date of birth is, except that I think he's probably older than the other Gundam pilots within their "more or less within a year of each other" age range. According to his official ID, like Duo he's a couple of years older than his estimate of his actual age, because you have to be 18 to work for the government even if you were a 15-year-old Gundam pilot, and it's not as if either of them had any official record of their existence before.
ICly, Cathy picked the date, when he needed to put something on an official ID. (And she felt he needed a birthday to celebrate, because everybody does, come on, Trowa. Trowa puts up with this tolerantly.) OOCly, I wanted him to be a Leo, because there are like six canon reasons that makes me laugh. (I'm easily amused, okay.) I think August was nearly over when I realized that, so I picked a date that would let me bring him in on his birthday because, again, I'm easily amused.
Clare: Nope. If it's a thing her world celebrates, she's forgotten when hers is, anyway. She'd be politely confused if you tried to make her find it important, most likely.
Edel/Uzura: Nope. It's not relevant to Edel. Uzura has one, if you kind of squint at the definition, but time in Kinkan Town is so weird anyway that I have no idea what it is.
(Past characters: Will Stanton's is canonically December 21. Alain I picked one for, although I don't remember what it was; I think my main concern there was spacing it out from his friends', and it might've been February or something? Lan I don't think I ever picked one for, or Millicanoned anything about it being a thing Malkieri care about. Piotr probably has one on record in a Marvel database somewhere, and I don't remember if I ever did anything with that. I can't remember if I or Edmund's previous mun set anything for his, either.)

Claudia's birthday is March 11th because her sharing a birthday with Douglas Adams amuses the hell out of me. (Canon will possibly Joss me on this point, but canon's also still running on the delusion that she was 19 in season 1, which really does not fit the rest of the timeline.)
I gave Regulus a birthday in May

Still works.) in the first game I played him in, just because that felt right, and that definitely stands here. I should figure out which one it is and maybe send him home for his birthday. Imp's operating on a 13-month calendar that I don't feel like grappling with long enough to pick a birthday for him. I can't remember if I gave him one in the Disc RP or not.
Red's operating on a different calendar, I'm pretty sure, and if the OUaT show writers can't be arsed to MAKE A FREAKING MAP OF THE ENCHANTED FOREST, I doubt they'll ever explain the calendar either. As for Ruby, I haven't tried to give her a birthday; who knows if it was even a factor in the curse.
Cata and Sam are also operating on a different calendar (one that... still has something called Yuletide... but that's another matter). Further, for Sam it's canon that he has no idea when his birthday is, exact year included; his mother was too brain-addled to pass on the relevant information, and it's not like he could (or wanted to) ask his father. He's never bothered picking a day to mark as his birthday, I don't think.

Helena's is the same as the historical HG Wells (September 21), which I think is mostly what canon goes for with her. Also, did you all know that if you try to put a birth year in DW as 1866 it says it's an invalid birthday? Yeeeeeeah. Oops.

Fluttershy... I don't know. Pinkie-mun has suggested sometime in May... The fandom seems to have "Harmony Days", a bi-monthly recognition of the Elements of Harmony, and Fluttershy's (Kindness) is April 6... All I know is that she doesn't feel like a winter birth to me.
Kain has no birthday. Kain needs no birthday! (Well, he probably does. But he doesn't really want it recognized.) I really ought to do more with him; I don't feel inclined to drop him, but I've only brought him in a few times.

All four turtles mark the passing of another year on New Years, but they have personal celebration days of their choosing through out the year.

Twilight's birthday is April 18, a date I picked more or less at random.
It's common fanon that Princess Celestia's birthday is the summer solstice. Therefore, I decided that Luna's birthday is on the winter solstice, December 21.
Vanellope's "birthday" would be the date her game was plugged in, but canon gives no hint as to when that was, so I'm leaving it a mystery for now.

Ellen's birthday is canonically July 13th, 2258. You have to have the G.E.C.K. game editing package for the PC version of Fallout 3 to determine this, since during the birthing scene you don't have access to a Pip-Boy, but it's on the Fallout Wiki so I'm good with that.
Ray's is October 15th, 1974 because I used the Ghostbusters: Legion canon for him. Legion takes the events of the first movie and puts them sometime in the early 2000's rather than 1984. It was easier to make Ray born in the same year as me in order to keep my references straight for him.

Ben shares his birthday with his creator, Jack Kirby, to wit, August 28th. I don't know if that is Marvel canon but it is for my Ben.
Thalia has the winter solstice from canon as her birthday, December 21st.
For Val, Jessica, Hank, Andrea, and Anton, I just picked the day I made the journal since no canon birthday is given. Same with Quinlan, though in his case he's on a different calendar all together.

I gave Hiro and Jennifer birthdays in September because Sailor Mercury.
I went with January 6 for Ryûk, for reasons I can't even remember anymore.
I said April 1 for Strong Bad, but I don't take that very seriously.
I put Michael's 1900 birthday on January 1 as an homage to Warren Ellis' "Century Babies" concept, only to discover from a Chinese horoscope search that he was more likely born after the lunar new year. (I'm thinking of moving the date to March 23, because N-Day.)
Back when I played Obi-Wan, I compromised between giving him Alec Guinness' birthday and Episode IV's launchday.
For Ralph, I subtracted 30 years from the theatrical release of his canon, then accidentally added a day because I didn't actually see it on opening day.
Néo's birthday is another compromise, in hir case between those of Nao Tachibana, hir PB, and Nene Mukai, the actually-older professional loli who plays hir younger sibling.

Dinah has a canonical birthday - it is April 10th.
Dick has TWO canonical birthdays - November 11th for comics!verse, December 1, 1996 for Young Justice.
Mac's might be the 3rd of May (historical birthday) but as nothing that survived as historical record is actually accurate in terms of canon, that might not be true. He might pretend that's his birthday, but it's just as likely change next year.
I have no idea what the birthdays for Will, Marguerite or Renee are. I'm not sure either of them think it a big deal.

My other pups don't seem to have any canon birthdays. And I have never felt inspired to give them any. In fact, Charlie is an orphan and has no way of knowing, and Gibbs is from an era when it was probably easy for his parents to not pay attention to the date if he wasn't born on a holiday. And Knox is actually the kind of person who actively avoids talking about his birthday. He doesn't trust anyone not to use the day as an excuse for a silly prank or an embarrassing party.

I...am actually not sure for everyone else! I haven't picked one for Olivia, the Trickster's birthday dates before the creation of the Earth if you're going by certain belief systems, and Bolin was probably born sometime in the spring (since, canonically, that's when a high number of earthbenders are born).

Some version of canon somewhere (not necessarily SV) has Lois' birthday as August 17th. I don't remember which, though.
Shockingly, there's reason to believe I can at least pick a canonical season Tavi was born in. (Useful information out of Butcher? The horror!) Mind, this is assuming that Carna has approximately Earth-like rotational, lunar, solar, and seasonal cycles. I feel safe with this assumption because Butcher is lazy. Anyway, Tavi's dad proposed in about September (on the 'harvest moon,' a game I am currently addicted to), ten months-ish before Tavi is born. Tavi is probably born in between late June and early August. I haven't picked a day.

And then Manny just doesn't care anymore, because being born doesn't matter much when you're dead. Asami and Katara both come from a world that doesn't use the Gregorian calendar, but I imagine Asami as being born in autumn, and Katara... during the time of year in the South Pole when the sun is up longer. Hiccup also comes from a society that doesn't use that calendar, but I imagine he was born during the months in Berk when it hails. These are all pretty much because-I-feel-like-it decisions.
(Oh I forgot Marceline. But in the comics she treats the Nightosphere as her "home," so it may also not have a normal date.)
