Minx knows how good she looks in reds and holds. Mostly because they are her Victoria Secrets angel colours. (Yes, she is!)
Gods only know where David gets his blue suits from. I guess in a world of neon and bright colours, muted tones would stick out too much.
Diaval wants his feathers back, hence the black.
And Olivier love the rich colours of his homeland - deep blues and earthy reds, complex geometric patterns repeating over glazed tiles.

Jessica: I am seeing something red, of the shade that appears black in low light, with a yellow dagger pattern. Reasons might be obvious.
Hank: Can't help but think of tweed or blue fur.
Quinlan: Smoke; hard to hit, can be deadly, but can also suggest hanging out at a campfire, or cooking at an open fire.
Brimstone: Teeth are so tied to his story it's hard to think of anything else. I'll edit later if anything occurs to me.
Ethan: Various shades of brown in cotton, wool, or hair.
Andrea: Gunmetal and daisies.
Lady Trent: Starched white linen as that is the only fabric I can imagine that would be close to dragon wings.

Ellen's gonna be blue and gold pretty much to the day she dies, thanks to those Vault suits.
Shephard is camo, the pattern that was in use in the United States military in early 2001, whether the blacks and grays of urban combat or a more woodland-appropriate greens-and-browns. The trolls would probably point to either Tyrian purple or a certain shade of dark blue for him, though, since his Trollian text comes out in Tyrian purple and the past few times he's been a troll for Cubefall he's bled very dark blue.
The color I associate with Stacker Pentecost is officially referred to as 'eigengrau' or intrinsic grey. It's the color that sighted people see in the absence of light. I associate it with him because it's my personal headcanon that this is what flooded the Drift when Tamsin Sevier blacked out and left him Coyote Tango's only pilot.
Santo is sparkly silver. His full wrestling name, after all, is El Santo Enmascarado De Plata.
Medic gets associated with the light blue of his gloves and the rustybrown color of dried blood.
Couldn't say for Varric; as for Edward Kenway, well, his canon is Assassin's Creed IV: Black Flag, which kinda tips the color balance somewhat.

There is a picture Yasmin AbdEl Aziz wearing a really pretty purple dress that maybe I should turn into an icon, but she is wearing a huge straw sunhat and idk. Maybe I will turn it into an Amascut icon some day.

Starfleet reds are obvious for Sariel, but I tend to associate her with bright, friendly floral yellow, leaf greens, sometimes coral pink, and definitely lavender.
