I have no answer for Selina as we haven't seen her in any relationship and she is young yet. Going by what they've show of her feelings for her missing mother, I would say she holds onto the happy feelings and memories, as well as keeping a memento.

A part of me would like to say that the Master of Ceremonies doesn't have a heart to break, but I don't know if that's entirely true. I actually think he's fallen in love many times, but took to breaking other people's hearts first because he knew he could never follow through with that sort of relationship. However, if he did lose people who he regarded as close, he would withdraw for a bit, get drunk on gin, and move on. He doesn't allow himself to be sad or angry for too long.

Quentin gets quiet, he's used to not showing too much as it can be used as a weapon against you, he's a master of the neutral courtier face. But when he's heart broken, it wears him down a lot, but he doesn't talk about it.
William works too much to keep himself from thinking. Sameth does the same thing.
Jane is another who works but her work is writing as she tries to find something hopeful.
