Enjolras... has been known to sleep-deprive himself, yes. A little sleep-depped, and he just gets more intense. A lot, and he gets quieter in a way that's less quiet reserve and more distracted zoning out. A lot of sleep dep and juuuuust the right company and he can get kind of punchy, but that's rare. (And, of course, with sufficient motivation, he can go on low sleep and adrenaline for a long time -- hi, barricade.)
Cosette just gets either kind of cranky or more kittenishly cuddly, depending on circumstances.
Thor is pretty hard to get noticeably sleep-deprived, thanks to Asgardian stamina and metabolism. He doesn't actually need all that much sleep. If you can manage it, though, you'll eventually hit a point where he gets (more) short-tempered, and snappish about little stuff he'd normally ignore.
Trowa is extremely well aware of his own limits in this, and of what coffee and stronger stimulants will do in terms of allowing him to function as close to normal as possible for how long. He's also good at making sure he does get enough sleep whenever possible. So the useful answer really is that he acts like usual, and makes every effort to squeeze in enough sleep despite the circumstances to make sure he continues to act like usual.
River gets cranky. And, depending on circumstances, may just find somewhere to curl up and go to sleep anyway, no matter what time it is.
Regan, like her daughter, gets cranky.
Clare doesn't need to sleep too much. Uh, but if she pushes herself into the ground, she'll get even more obsessively focused than usual on stubbornly doing what she's doing (whether or not it actually needs to be stubbornly done at this time) right up to the point when she faceplants. This literally happens once in canon. Good job, Clare.
Asami will mostly tend to be blurry-eyed and quieter, though she might be slightly quicker to snap at you if you get too much on the wrong side of her.
Katara, on the other hand, gets louder and crankier, and doesn't need much provocation to bite someone's head off or make snide comments she definitely wouldn't make otherwise.
Will gets even quieter and less willing to make eye contact, if that's possible. He'll also have a lot of trouble focusing and may easily kind of mentally wander off into daydreams, which if he has encephalitis and doesn't know about it may actually manifest as hallucinations.
Elle, if she's really feeling the sleep-deprivation, is more likely to zone out, or complain, or yawn loudly and obviously when people are trying to talk to her.
Mary: like today is a great day to be really awful to Edith.
Stiles: like he's possessed by an evil Japanese demon? Or maybe it was the demon giving him the nightmares so he wasn't sleeping in the first place? It's all very confusing.
