Canon does not give a height or weight for Shephard. I'm using John Cusack's height of 6' 2.5", but a weight of around 203 pounds to reflect a longer history of workouts and bulking up muscle-wise.
Ellen is 5'2". I doubt she weighs much more than 105 pounds, if that. The Capital Wasteland is not a place you pack on pounds unless you are fond of eating people.
Stacker Pentecost is 6' 2.75" tall, since that's Idris Elba's height. I do not even pretend to know what his weight is, between the exercise (there are cut scenes that show Stacker with his shirt off and he is ripped) and the concealed nosebleed cancer.
Varric is maybe five feet tall, but he's broad and stocky even for a dwarf, so he probably weighs a decent amount. Unfortunately I do not really know what that is, but I'm almost certain that if you threw him in a body of fresh water he'd sink like a rock due to density.
El Santo is 5' 10" tall and had a competition weight of 210 pounds. I'm good with that.
For Edward Kenway I'm using a height of around 5'9". I use Charlie Hunnam as his PB, but let's face it, it's 1715 and he's not from a family with the social status to get a good diet growing up. Also Edward is visibly shorter than Adewale and a number of NPCs. Weight-wise, I don't know, but we see him shirtless when you go harpooning or diving for sunken treasure and he has good musculature and little to no body fat.
Medic... For the purposes of hitscan weapons in the game all characters have varying heights, and Medic is visibly one of the taller ones, but we get no real reference numbers. I'm going with the fairly common fannish guess of around 6'1". Don't know about his weight.

He has extremely good posture. He's not a swaggering kind of guy -- he's got a pretty businesslike walk, that of an urban guy getting from point A to point B, though he'll match the pace of whoever he's with, and generally his body language tends towards self-contained and without wasted motion.
Thor I tend to figure is about his actor's height, i.e. 6'3" in his stocking feet (and he's basically always wearing boots.) I'm not good with weights, but he's an extremely solid guy -- all muscle, and a lot of it. I don't think he's particularly heavier than a human of his size and build, though.
Also very good posture! Thor is a swaggering kind of guy. When he walks, he takes up space. When he sits down, he takes up space too. He's not trying to be arrogant or posturing, but he's been raised to expect that he's going to be a center of attention and a public figure with eyes on him, and he's comfortable in that assumption.
Cosette is on the shorter side even for her day, IIRC, which means she's probably barely 5 feet at the most. She's slim.
She's also generally straight-backed (corsets!) and graceful and so forth, although she's also swathed in voluminous petticoats and puffy sleeves because 1830s Western European fashion was a thing to behold.

Beverly is Hettienne Park's height and build, so 5'6"ish, trim. She does tend to wear heeled boots that bring her up to 5'8" or so. Although this is my favorite gif of her in motion, generally she's more business-like than that, although I think she's always got a little sway in her step. (See again: heeled boots.)
Epimetheus is HELLA TALL. Definitely tops 6'4" and is lanky, so he appears even taller. They don't call 'em Titans for nothing. He's not skinny, though -- he has some muscle under there, he's just not, like, built.
He is incapable of going anywhere at anything other than a saunter.
Nita -- I think at some point I put her in the 5'7"-5'10" range? Canon describes her vaguely as "tall," so I think she's taller than Anna Paquin. She also tends more towards Paquin's Rogue-era build than her super-skinny Sookie Stackhouse build.
I'm super bad at remembering that tall characters are tall, though, having no lived experience with it. Are you telling me some people can reach the top shelves without climbing onto the kitchen counter? MADNESS.

Bossuet I write as long and gangly--a bit of a beanpole. Or scarecrow, considering the state of his clothes. In Britain, at least, the average height for a young man in the 1830s was ~5'6" or so. Let's say Bossuet is 5'11, maybe scraping six feet tall. And on the lighter side for his height. He's kind of a slouching, strolling, leaning kind of a guy.
Gredya is a big wolf and a small person. The whole transformation thing is a big problem for retaining mass, and in their human form the Wyr are notably gaunt. Say she's able to maintain a weight of ~100 lbs, which is a big female wolf, and comes to about 5'5". She's wiry, flexible, very graceful on her feet, good posture.

He has straight posture when he walks; but when he sits, he's either a floppy, boneless cat or a crouching imp. His walk is more like a glide, graceful but unassuming, if he simply wants to get from point A to point B. When he does want your attention, though, sometimes he'll stalk, or sashay, or slink. Just think feline, really.

Sam Wilson: Anthony Mackie is listed at 5'10" and 190 pounds. Seems as good a number as any. He walks with a pretty easy gait and holds himself with confidence without seeming aggressive. In some ways he might read as a coiled spring, but more as potential than tension, if that makes any sense.
Tybalt: Canon never gives a number but he seems to be just a bit over average height. Build wise, I would say he is between a middleweight boxer and a ballet dancer. A quick websearch says middleweight boxers are 160lbs or less and a ballet dancer who is 5'10" is likely around 135lbs. Since Jonathan Rhys Meyers (his PB) is 5'10", I will say he is about 145 lbs. As to how he carries himself, he always walks as if he deserves twice or thrice the space he takes. He is always poised in the best fashion possible. Models wish they had a hint of his grace.
Quinlan Vos: I'm going to be lazy and just go with Jason Momoa (his PB). Thus, 6'4" and 220 lbs. He walks with a mix of predatory and boneless grace. Until he knows he is in a safe place, he holds himself as if he were challenging the world. Even when he knows he's safe, he seems like he can explode into action.
Jessica Drew: The official Marvel wiki states she is 5'10" and 130 lbs...which is oddly healthy. I swear Marvel used to list her as something around100. Still, looking at Olympic level volleyball players (I'd use gymnasts but they don't seem to come that tall), I'd say she should be more like 150 lbs. She carries herself a bit stiffly at times, as if she is holding herself up. Other times she is easy and fluid in motion. Depends on if her BFF is throwing herself on heroic pyres or not I guess. ; p
Andrea Nash: Is short, like barely clearing 5'. This is canon. She also is described as being built for strength. Looking to wrestling, I see one wrestler who is 5'3" and 107lbs and another that is 5'5" and 135 lbs. I think I will split the difference and go with 120 lbs, since the 5'3" wrestler has twiggy arms. She carries herself as harmless and safe as possible, smiling often and generally being open. Until she is in a fight. Then she turns military efficient and serious.

Kreyu's height and weight are variable, depending on what shape she's in. Her draconic form is 150 feet long and weighs more than 300,000 pounds, which would be her 'upper end' size wise. :-D

Giovanni is 5'10 and not particularly well built - he's a merchant's son, his family have servants, they don't do hard physical work. He moves very casually and clumsily until the very end of the movie, when things get serious.
Michael Carpenter canonically almost matches Harry Dresden in height, and Harry's 6'9. He doesn't have the musculature he used to before a year in physical therapy, but what he had then was a lot, so he's probably still better built than a lot of men.
Jonathan Levinson is 5'2 and sort of chubby, although this should not be taken to mean he's not a dangerous fighter.
Nancy is 5'1 and very thin, but with signs that she wasn't always. She's another one who moves habitually quietly.
Cadfael is 5'10 but as he's got older, has probably lost an inch or two, and doesn't have much spare fat on him.
Roshaun is just described as tall and graceful. He's basically a Tolkien-style elf without the ears.
Gavroche barely scrapes 5 feet and resents it greatly. (He blames his parents, as usual.) That said, he manages to project a bigger presence than that with sheer force of energy.
Ichabod is 6'1 and lanky. He moves very gracefully even when diving behind a wall to hide from an explosion.
Norrington is also 6'1 and a little on the stockier side than Ichabod. He was a nobleman's younger son, then an officer, so well fed, and as a sailor did his share of physical work.

I have always BSed the Knight's appearance, as he is quite literally the storybook Knight in Shining Armor. He should stand as a Knight stands, which is straight as an arrow when not burdened with sorrow, be as tall as a Knight, which is probably at least a little taller than your pup, and weigh as much as a Knight weighs, which is quite heavy from muscle. But that's just when you look at him as a concept. When someone gets to know Lohengrin the person, they end up with someone
who looks like Fakirthat Fakir resembles. He still stands straight, and he's got the leftover height of youth to put him around 6', maybe two or three inches under. And he's still heavy with muscle, probably at least, what? A good solid 200lbs? Plus another 50 if he's got his armor and stuff on.I haven't even the faintest for Lucas? Going by what he plays like in Brawl, he's short and light, quite floaty in fact. Some of that is the art style, though. He has the strength of youth behind him but not much muscle. He's likely about the same size as Mirai all around. He stands straight for the most part, maybe a tiny bit hunched in on himself from years of being coddled.
I actually do have height and weight stats for Mia, but they're from when she was 16. Back then, she was 5'4" and weighed 99lbs. She's since been on a life changing adventure, married someone who likes to cook, had two kids, and generally lived her life for about 10 years. All of those things have added a bit of height and quite a bit of weight on her.

Sherral's about 6'2" and liable to grow at least a touch more in future, and is broad-shouldered, in fairly peak physical fitness (and potentially also a shade gangly). He has military posture, and he generally has a slight, indefinable air of authority.
Wan is - well, if posters are anything to go by, he's roughly the same height as Korra. Probably a little bit taller, but not much. That would probably make him about 5'8" or 5'9". As for build: It's probably fair to say that by the time he meets Raava, he's put on a bit more muscle than when we first see him, so he's fit, but not especially broad. He, like Yugo, is a swaggerer.

Will is six foot, tall for his era, but lanky and he moves with an awareness of his space and decent posture that comes more from sword fighting than having it trained into him.
Charles is James McAvoy's height and weight which means he's 5'7", but he has a lot of presence and people tend to notice him when he comes into a room. Charles is in shape but not as much as an athlete, he clearly jogs and exercises and is aware of where he is and others are, but he's also a scholar. He has good posture and a certainty in how he walks.
Quentin's in the process of growing, canon doesn't specify his height but I imagine him starting out around 5'5" and ending up at six feet if not taller by the later books. He's lean but muscled, similar to a dancer and walks with an incredible amount of grace and posture that comes from being trained as a courtier and swordfighter. How he moves is one of the signs that he's not quite human as in canon its noted that Pureblood Fae are always graceful.
William is another that's the same height as his actor, which makes him 5'9" and he's strong but mainly lean muscle. Since he's now a few years on from canon, he's not as thin as he was then. In terms of how he moves, he's not confident, he's far more graceful on horseback then on the ground. He's always trying to hold himself in a way that he seems taller and older as he looks young and he's working to shift that.
I don't believe that Moist's height is ever defined in canon, but I picture him as similar to Jude Law who's 5'11". How he moves depends a lot on what part he's playing, but when being himself, he tends to be quick in all his movements and graceful. A great part of what makes him such a good conman is how he's nondescript and can disappear easily into a crowd or stand out when he needs to. How he moves is just as much a part of the disguise as his outfit.
Sameth according to canon is about 6" tall and he's actually shorter than his sister and there's an awkwardness to how he moves. At first it was being a teenager but part of that's him. He's at his most elegant and sure when dealing with the Charter or working, in canon he was an athlete and is a swordsman, but he doesn't come across as confident. Sameth is pretty muscular due to his forgework, I think of him as like a rugby player.
Jane is the same height as the actress who played her, Anne Hathaway, which is 5'8". Historically Jane would have been shorter probably 5'3, but its simpler to follow the movie in terms of picturing her. Jane is elegant and has good posture as a woman of her time wore stays and danced, keeping to a certain style and Jane loves to dance.
Demeter's tricky as she can make herself look however she wishes but her PBs provide a good reference. Kate Winslet is 5'6" and Judi Dench is 5'1", Demeter tends for the taller end of things. What's striking about how she moves is that she never wears shoes and while she's graceful, she tends to move with a focus on connecting with the ground.
Tumnus is slightly shorter than James McAvoy making him about 5'6" and he tries not to take up a lot of space as he moves. His hooves make it easy to know where he is as they make noise on the wooden floor of the Bar.
Ivan looks like the epitome of what a Barrayaran man should be which means that he's tall and confident. Canon doesn't give an exact height but I picture him as a little over six feet tall, he's well muscled and has the posture of someone who's been in the military since age 18 and before that grew up at court. He can be quick on his feet, but his normal mode of walking and moving is taking his time. Though what's interesting about him is tends to not try and draw people's attention when he's in the room unless he wants it. Some of it he does unconsciously but compared to Miles who draws people's gaze through his energy and charisma, Ivan tends to blend.

Ava actually has a canonical height and weight, because she ends up on a missing person poster. So she's 5'5"! But I think 108 is a ridiculous weight, because she's got such a round-faced girl-next-door thing going-- plus, I don't know that driver's licenses and the like are the most accurate for determining weight in the first place.
Most of the time, Ava's posture and gait are both pretty unassuming. She slouches or hunches while she's reading/concentrating, and she doesn't have a super assertive walk. But if you happen to see her drop the facade, she becomes a lot more confident (bordering on arrogant), with economical movements. She has been known to stalk places in the dark.

Ganymede's on the short side for most guys, but he's 5'7"-8"-ish? Mostly I attribute this to knowing that that long ago, guys weren't really hugely tall, but Iiiiii have yet to do any real proper research on that or get real strong numbers.

Wonder Woman is 6'1" in flat feet, and she's got plenty of muscle. Her carriage is pretty straightforward, direct, and quite willing to take up space.
Raven is 6'0" and ridiculously skinny for that height as a dude. As a woman she's shorter, around 5'0", and has a stockier, more grounded frame.
Nynaeve is 5'4" and slim. She moves with purpose, though as an Aes Sedai she has learned to glide rather than stride. Except when she loses her temper.
Michael is 5'10" or so, skinny, and moves like very angry man of the same height and considerably more bulk.
Galadan is maybe 5'7" at the outside (probably closer to 5'6", hush). He moves like a forest-trained hunter who is perfectly aware that he is better than you in so many ways. His presence is such that he seems a lot bigger than he really is.
Dean is 6'1" and bowlegged. Hilarity.
Ysalwen Surana is 5'5" or a little less, depending on shoes, slim, and graceful. As time progresses she moves with a lot more weight and determination. Still not stompy, though.

Fairy Fixit has a height which I eyeballed at 20 inches. So for your reference, a 20-inch doll can substitute in for her. I usually use my forearm + hand as reference, since it is easy for me to forget that she is not tiny, just small. Or huge, for a moth. I have no idea about her weight because of her nonhuman anatomy, her non-human proportions, and because she is probably full of magic haemolymph that has unusual gravitational properties. Zanaris Fairies are almost always in the air, and non-royals like Fixit hover a bit erratically. She does fly in straight lines though, more so if she does it at a quick pace, but the slower she's going the more she bobs aroound. She's talented enough at flying that she can accomplish something like Lucas' Psi-Teleport if she isn't wearing her hard hat.

Tahno is 6'3'' and about 200 pounds? Weight is difficult to pin down for him given that he is an athlete, but he's also skinny as hell. Tahno never walks anywhere; he slinks, sashays, or saunters. He stands with a slight hunch from looking down on everyone all the time.
Caroline Dhavernas, Alana Bloom's actress, is 5'4'' and 132 pounds. She walks by swinging her arms in a confident swagger, and stands with her feet apart and her hand on one hip.
