Ahahahah um. (I laugh because I had hella insomnia last night and NEEDED to sleep, and that's never a good combo.)
Dejah sometimes has to be reminded to sleep. She always has a project going on her work bench. If it's not the Project. If she's not slept in a particularly long time, and doing advanced calculus in her head is becoming a dodgy proposition, she paints. Or sketches. Or reads. Or brainstorms for the next project. Or journals.
Hank+No sleep=Lab work. Like it would be anything else.
Rollo: I'm thinking he'd either go in search of a brawl, someone to share his bed, or walk the boundary of Kattegat.
Ahsoka: Meditate. Assuming that won't work, go for a walk.
Asajj: Bar time. If she were on a ship, I'd imagine she'd be pacing or looking into her latest contract more.
Quinlan: I'm thinking basic maintenance on the family spaceship. He'd be careful not to work on vital systems though.
Sam: Go running or go for a walk. Movement of some sort.
Izana: Watch a movie or read a book, I think.
Selina: Go look for a different place to sleep since something about her current place is wrong. She might look for any likely pockets to pick while doing so.
Tybalt: Take a turn carrying for the Court kittens.
Luidaeg: Not sure she sleeps but I think she'd be watching trashy TV.
Asami often likes to do little logic puzzles in her mind, or review projects she was working on during the day. Which isn't that helpful in getting her to sleep, but counting koala sheep just manages to make her bored but not tired. Katara often does a mental run through of her plans for the next day, and if she's still awake after that, she may just let herself daydream. A lot of these daydreams involve her being a badass waterbender.
Will has always had trouble sleeping, and especially when he was younger had difficulty quieting down his mind. So thinking about/imagining any kind of process (like repairing a motor) is more likely to just continue to keep him awake, as for him it would be pretty much the same as actually doing something like that. His father had similar problems, and when they lived near a coast or river taught him a trick of focusing on the sound of the water to the exclusion of everything else, which can kind of help. Will sometimes still imagines that sound, now that he doesn't live near a coast. (This also sort of plays into his version of a "mind palace.") His father also used drinking, which Will also does sometimes, though not to the same extent.
Elle is very good at sleeping when she needs to. Sometimes she'll have rough dreams, but it's not really the same as insomnia, in that she can usually get to sleep pretty easily. If she really can't, sometimes putting on a light or some kind of noise in the background will actually help ease her to sleep.
Enjolras: At home in Paris: Read, or write letters or pamphlet drafts. Possibly go for a walk, although Paris in the early 19th century middle of the night is not exactly the safest place around, so that requires a certain threshold of restlessness. (Certainly a threshold he's hit, though, especially considering that he can emphatically take care of himself in a fight.) At Milliways: read, or go to the library to read other stuff (and for the walk), or go down to the barroom. He wouldn't wake up Combeferre, and would try to be as quiet as possible, but if Combeferre was awake anyway they could talk or argue about philosophy or watch tv or whatever.
Thor: See if anybody's around to chat with or spar with, go beat up some pells for a while, sneak down to the kitchens to beg a snack for old time's sake, go flying. Maybe play around with dumb tricks with Mjölnir or some other weapon for a while -- you know, the equivalent of knife flips and stuff. (These days, maybe brood about Loki, but he'd still rather multitask that one.)
Cosette: Pre-marriage, read a book or go walk or sit out in her garden. Or maybe, pre-Marius, go bug her father in his little outbuilding house (OH VALJEAN) if there's a light on there to indicate that he's up. Post-marriage, she also has the option of waking up Marius to make him entertain her, which she will probably gleefully do just because she can for a while.

Trowa lives in an age of internet. So! (He also has a more or less endless supply of mental dossiers to shuffle through and reconsider if he'd rather do that and/or has some reason for staying offline. Or there's pushups or something.)
River would wander around the ship and see who was awake to annoy, and/or what hallucinations were especially pretty, and/or whether it was a useful time of day where any of her planetside friends or family live to call them up. Or there's Milliways, but that's for when you've really committed to being awake, unless you're gonna try to nap on a couch or under a tree or up on a rafter instead.
Regan is back to the good old standard of "books, correspondence, maybe a soothing beverage." Her correspondence is via fancy future internet, but still.
Kazul has a sizable library and a bunch of random magical artifacts. She's not great in the kitchen -- big talons, small tools -- but I bet she could manage to make herself a saucepan of hot chocolate.
To be honest, I don't think Trowa generally does either, beyond "not tired yet so I'll read or internet a while longer," but I was going with the question. Certainly it's not something he has well-worn strategies in place for. (Aside from the fact that he has well-worn strategies in place for long periods of avoiding boredom while stuck being quiet in one place, and that translates pretty well.)
But Quatre is definitely not someone I would figure on being afflicted with insomnia, no.
I suspect that Floki would have terrible insomnia. And I mean like terrible, frustrating, physically and mentally exhausting insomnia. If Helga can't help him (whether by sex or just holding him and talking to him), he would sit on the shore all night and listen to the water lapping against the boats.
