Your pup is a witch/wizard of the HP-verse variety. But omg, no one has started a school to teach the bright young minds of the future! This cannot stand! So...
Which House does your particular pup head up and which other M'ways pups do they team with to found the school with them? You can stick to the ideals of the HP-verse if you like: for example, Jim's a Slytherin and Javert's a Hufflepuff, so they could be two of the four. Or go wild, and consider their ideal school. For example, Jim would ask Sherlock to be a co-founder, and what the hell kind of students would that produce? What other two masochists would agree to work with them?
If you're stuck, post your pups in with the things they'd value passing on to students. Others can tag in with collaborations that might make sense, might be a terrible idea, or would just be mental fun. :D

Actually, I'm always torn between Anakin being Ravenclaw or Gryffindor. He'd fit both. (And Jacen would fit both Hufflepuff and Slytherin, depending on timelines.)
The Solo/Skywalker kids could never found a school together though. Especially if they were joined by Kylo Ren. Can you IMAGINE.

Cosette... huh. Well, without Milliways: Marius, Valjean, and she'd go back to the convent school where she grew up and ask them for advice and assistance and possibly teacher recs. With Milliways, she'd also ask Joly and Bahorel and Feuilly for advice, and with more not-your-society caveats she'd ask Sonya Blade and Helen Ramirez and Elrond for their thoughts too. How she organized it from that would depend a lot on the AU and the advice she got, and on who volunteered. (But a) she wouldn't do a houses system; she'd leave it up to the students to come up with their own in-joke houses if they wanted, like she and her fellow students did, but it wouldn't be institutionally organized. And b) she is 100% a Hufflepuff anyway oh man.)
Kazul gets Cimorene and Morwen and Telemain involved, assuming this isn't a dragons-only school. She doesn't really involve Milliways folks in the organization, but she does invite them to guest lecture.
Thor would organize it with Sif and the Warriors Three, with lots of consulting both his parents and Heimdall, and missing Loki every step of the way. I don't think he'd actually consult Milliways folk too much -- not for something on Asgard. Now, if it was something he was organizing on and for Earth, then definitely he'd consult X, Darcy Lewis, Diana of Themyscira, and probably Ellen Park, Bruce Banner, Djehuty and Amy of Ambergeldar. Who he'd team up with would depend on who volunteered, though X is a top bet for someone he'd work well with who'd also be interested and have or find the time.

Eliot would chose the other Physk kids of course. His house would be akin to the Cult of Ecstacy from the Mage RPG and they would specialize in Time and Forces magics. Margo's house would focus on Mind and Entropy, and would be something akin to Slytherin. Penny would have something like the Dreamspeakers and would specialize in Mind and Correspondence. Alice would be a Hermetic Order type house and specialize in Prime. Janet would be something like the Celestial Chorus, but with any deity, and focus on Spirit and Prime. Quentin would be like the Orphans, accepting anyone who didn't fit anywhere else and would have no specialties in magic.
I'm kind of boggled and scared to think of the Vikings cast with magic; boggled as magic was typically viewed as womanly and scared because these guys are vicious enough. Still, Lagertha, Siggy, Helga, and Aslaug as house founders! \o/

If he had to pick other people to put things like Charms and Care of Magical Creatures into the mix, he'd pick the Harrys, because Hotspur can deal with animals and Monmouth is good at organising armies and stuff, so he'd probably be alright at the boring bits. And Feuilly seems to care about learning things, and would probably be good with the thick students who'd want to come so he could deal with all that.
Javert , for a start, should never be given the power to start a school. But he'd pick Valjean obviously, because obviously. His House would be aimed at students who work hard, and understand responsibility, and don't cry or whinge whenever they're told what terrible human beings they are. He'd choose Father Harman as another co-founder, to instil a strong religious thread through the place - and promptly fall out with him for being too liberal, causing a Slytherin-style rift. Valjean would side with Harman on that one. For the fourth, he'd maybe ask Ellen Park, because he admires her commitment to her people, she's sensible and works hard. Plus, there should be a female to deal with the inevitable female kids who will turn up.
Valjean would ask Cosette, because she would be a great teacher! Assuming this AU world is a place where her working is not completely taboo for him. He understands the need for a balance of skills to fit a wide range of students, but would also want a strong moral backbone to his school. Soooo...he'd ask X, who would be a great teacher, and Eriond, who is obviously great at everything but also a really bloody decent young man.
He wouldn't ask Javert to co-found a school for him, but would ask him to be a teacher. There will be times he'd regret it, but it's really safer to keep him where he can see him at all times.
Courfeyrac - see Enjolras's answer. :D I imagine their school would be basted heavily on thinking for yourself, and Courfeyrac would definitely award house points to kids who break the rules, but give strong justification for their reasons when caught.

And hey, as jobs go, "teaching schoolchildren in your father's school with your husband teaching English or German or the magical equivalent of pre-law to older kids" is pretty respectable, I think. But this would still be a weird school in having mixed-gender students and teachers, as I understand it. Maybe they'd have a girl's school and a boy's school under the same administration, or something? Wheeeee 19th century. (Just no virtue rules this time. Oh man imagine Fantine as a dormitory mother though!)

It'll probably eventually get named after him, or part of it, once he's not able to protest about it.
As for the others, there are really only two I feel like mentioning. How to handle schools of magic is also a major plot point in Evelyn's world and I... haven't fully worked out how she handles it, except that Vivienne will only be involved because despite their political differences she is talented and a valuable resource for students, and also that it's a good thing Hawke will be busy with Varric and Kirkwall because under no circumstance is he allowed to teach all the new mages how to be giant trolls.
And as for Anakin... uh, pre-explosion, "Yoda can deal with that, right? And Obi-wan. Depa Bilaba's a good one and not stuffy. Luminara's good, and Plo-Koon. They can do it." Because he actually doesn't want to be a teacher. He's happy to come in and do, like, guest sessions or seminars on "this is how you lightsaber and/or fly properly" but he is not the type to teach. At all. Ever. He'd let those five sort it out. If you wanted to fit things into standard Hogwarts houses, with those five I think it'd be Depa Bilaba - Gryffindor, Luminara - Ravenclaw, Plo Koon - Hufflepuff, Obi-wan - Slytherin (he's honestly the most devious), and obviously Yoda is the headmaster. If you are going to force Anakin to be involved, he is obviously Slytherin's... actually, you know what, those four still get it and he was hoping to head up Slytherin and was deemed too junior, and that festers.
Afterwards he doesn't do founding schools. But you all knew that.

Charles kind of does this canonically but he doesn't get the kind of help he really needs until later. Hank's great with a lot of things but he doesn't begin with the same intense desire to teach that Charles does. Given his own choices for anyone, he would found it with Erik and Raven with first round of students profs those early mutants. The focus would be on being at a place to understand who you are, know the science of mutation and be thoughtful and empathetic. Erik would be the scary teacher who makes sure you know how awful everything can go and Raven helps the kids let loose and tests their assumptions.
Sameth would ask Nick and Lirael and Kait to found a school with him. He's a Ravenclaw at heart, Kait's more of a Slytherin and she and Ellimere would help the kids learn how to use politics. Sam and Nick would argue magic and science and how the world works. Lirael would help teach research and about Death. There wouldn't be a major focus on houses as Lirael and Sameth both suffered by being put too early into the wrong boxes. It would really feel more like a science school.
William wouldn't feel comfortable founding a school but he'd want to go to one.
Moist, you know at a later point in canon, I could see him endowing a school which on the outside has a classic and posh curriculum. On the inside though, he would make sure to hire a few people that think like him who teach kids how to adapt and he always teaches classes on getting out of trouble.
Jane would ask her sister Cassandra and her brother Henry and then find some authors, the school would be one where understanding society and how to shift it matters.
Ivan would volunteer to finance it and recommend that Miles, Gregor and Duv actually found the school with their wives. All the older family relatives would help because of course they would.
Demeter probably has helped many schools but I don't know if she'd found one. She wouldn't want to work with anyone she's related to but Malcolm Crowe would be wonderful, she'd bring in Gaeta and Hoshi with of course Kore at her side. There would be many lessons out in the world and understanding connections between people and land.
Tumnus would ask the Pevensies to found a school which they probably did and he would be the happy librarian.
