For the canon as a whole, it's gorgeously animated, has a lot of great voice-acting (including Yoshimasa Hosoya getting to monologue a bit as Yamato), and does a great job of marrying character development with giant monster battles.
For Yamato, I just find something very endearing about how he and Gabumon just keep getting up when Alphamon knocks them down.
For Sherral, no clips of him because he's a very minor character, but this whole scene sells Final Fantasy XII beautifully, combining some really lovely CG with some amazing dialogue. It's a turning point in canon for several different reasons, representing both the culmination of main character (well, one of them) Ashe's character arc; having Judge Gabranth, previously fairly restrained, go completely ax-crazy; and as Reddas, a friendly pirate you've encountered, reveals himself to be Judge Magister Zecht.
It's a long scene, although the last few minutes are just a boss battle and not relevant to the scene itself, as such, but it's well worth it.

I don't know if the version on Netflix is the dubbed version or the original version, but they're both good - the dub's a pretty faithful one.
There's a bunch of series in the franchise that take place in completely different continuities, but Digimon Adventure 01, Digimon Adventure 02, and Digimon Adventure Tri make up Yamato's canon. If it has 'adventure' in the title, basically, then it's all in that continuity.

Yamato: The Haneda Airport scene (or a small bit of it, at least), which is another great one for selling canon, but also has a nice moment of Yamato pulling a 'I can make Taichi, a hostile Digimon, and the soundtrack stop what they're doing and pay attention to me' stunt.
(It's also a shorter scene than the other one. Which helps.)
Sherral: Again, just for his canon, not him, but the introductory scene for Judges Drace, Bergan, and Zargabaath. While the point of the scene is mostly to exposit on Archadia's politics and provide the Judges' individual character motivations, the dialogue is stunning and the voice acting is excellent.

Ahsoka: I'd love to post a clip from when she just saved Anakin and he yells at her, but I'm not finding a good clip. Instead, here's a bit that sums up their relationship from later in the series. The clip is 3 minutes but the first 30 seconds is all you really need.

This fanvid is short, and so great. (For some reason it says it not available when I try it on iPad/phone, but it's fine on a computer.) So atmospheric, it spawned a nightmare cool fanfic in my head which I desperately trying not to write.
And this one made me like my second ever Britney Spears song, and touches on most highlights/expressions/scenes that make him great. From the first two series', anyway.
I'm not going to try and find anything to sell Sherlock as a whole, because this fandom is completely insane (I made the mistake of looking into it again today, because they're currently filming, and O M F G is all I can say), and huge, and yeah, if you like smart detective shows with great acting, just check it out is all.
Now I have to go and find my favourite ever fanmade Javert-Enjolras interaction, because lol.

For Dragon Age, have a four-minute compilation of some of Alistair's best moments. Also: is he an awkward overgrown mabari when trying to romance the player character? CONFIRMED.
And BSG...look, I am Team Gaeta all the way for obvious reasons, but Roslin taking a level in badass during the mutiny may be one of my favorite scenes of all time. (Sadly, I can't find the clip from S3 where Galactica bodyslams New Caprica and jumps away right before it hits the ground, but that's also way up there. A lot of moments are way up there tbh, I JUST LOVE THAT SHOW A LOT OKAY)

Anakin Skywalker/Darth Vader: If you go by Clone Wars or pretend the Apocrypha were well written one of the greatest heroes of his world, and one of the best damn villains in film--and they are the same person. And he has great theme music.
If you want a compilation for his character arc: An almost video with great editing but missing a couple cornerstone bits.
If you want a single scene, I am going to cheat because I think that doing Anakin and Vader separately is actually somewhat relevant! I was going to go with Huge Inner Conflict bits for them, then realized that was immensely silly.
- Anakin: This followed by this actually go together as a unit, because it's the same battle where Anakin is a ridiculous pilot and a Jedi and brilliant (and turns a mercy mission into a huge victory; I am sad there is no lightsaber-ing but it'll do).
- Darth Vader: okay every scene he is in but I almost legitimately forgot about the best thing ever.

The scene where its all Erik and Charles, I love them so much. Just their faces and seeing them both work. Also the fanvid to Make a Man out of You, this one makes me happy.
For 3:10 to Yuma, the last scene, this scene is why I play William and such a good and heartbreaking movie, major warning for gun violence and death.
Becoming Jane is hard because I just love the entire movie but the vid to Once Upon a December captures the bittersweet nature of the movie.
Narnia's another hard one but I think the scene where he's brought to life again is one of my favorites.
Ooh, I just discovered that an animated tv series of Robin Hood that I love, The Adventures of Young Robin Hood that informs a lot of Will when he was kid is on youtube. This is the opening. The other that really effects how I think of Will in terms of movies is Not in Nottingham from the Disney Robin Hood.
Okay, here are two of my favorite exchanges between Ivan and Miles which captures how they both work. Ivan sees more than he realizes and he gets Miles and cares. Both are from Memory.

Sherlock: Sherlock's Best Man speech from "The Sign of Three." Why this series is kind of ridiculous and wonderful in three minutes. It's not the best copy--looks like it was filmed off the TV on someone's camera--but it gets the point across.
I can't pick one moment for Mad Max Fury Road so I'm just going to link to the trailer that made me want to see it, and to Nostalgia Critic's episode about it because I kind of love that, too.
