Ahsoka: "I know to get out of the way of things trying to hurt me." Which loosely translates to, enthusiasm, sass, and the Force.
Sabine: "My armor is like my second skin. I'm being serious: sometimes I totally forget I even have it on and I fall asleep in it." Her armor is her heritage as well as protection. Beyond it though, she uses snark, intelligence, and attitude to keep herself from harm.
Hank: Totally uses his intelligence to protect himself. He is starting to learn that it isn't as effective as he thinks and is in fact limiting him.
Sam: Light hearted humor and emotional scare tissue. He's not afraid to wear kevlar or other types of body armor, but needs it to be flexible and not limit his range of motion.
Touji: Doesn't wear physical armor and uses pointed questions and friendship to protect himself.
Eliot: Doesn't wear physical armor either. I'm sure he could conjure something up if he needed, but it's not his style. Barbed wit and a sharp tongue are his metaphorical armor, and when those don't work, alcohol or other substances come into play. (Don't try this at home kids.)
Izana: Well, physically, they have a giant mecha. Metaphorically, I don't think they have armor. They are pretty open but I guess their confidence is a form of armor.
Selina: She wears a leather jacket and denim pants. She's also uses her awareness as a form of armor. She always knows where the exits are. Attitude is her best metaphorical armor as are her wits.
Rollo: Wears lots of different kinds of armor through out canon, though he starts wearing it mostly after the failed team up with Jarl Borg. It tends towards medium or light armor though; chainmail, leathers, and whatever that was in Paris. As to emotional armor, stubbornness?
Gene - his .44 Magnum, his fists, and his own magnificence.
Banner - Hulk.
Wayne - Batstuff.
Valjean - uses no armour, he just lets shit hit him.
Javert - he is shielded by the LAWR. (This is not a joke, it's canonically a symbolic Thing.)
Aubrey - handy with a sword and fists, but has no actual armour. His ship often carries Marines though, and it's their job to shoot shit and do the land fighting, at least in principle.
Jim - his own intelligence, planning ability, and propensity to be a chameleon. Plus, invisible teams of snipers and assorted criminal types who watch his back. But he wouldn't wear anything so crass as body armour. So amateur. If there was a situation where such a thing might be necessary, he just wouldn't put himself in that situation. He plays the people, not their weapons.

Amelia: Pssht, dragon. Who needs armor?

Metaphorically, Karkat's entire personality is a defense mechanism. It's a Knight thing. DAVE.
