Sunshine has canonical associations with a doe, so she would likely represent as a female deer in this universe. As far as I can find, deer are rarely anthropomorphized to the point of being bipedal or having hands (unless you're a wendigo from some nightmare dream-logic universe, and then you're not really a deer but the unholy progeny of a ravenstag) so Rae would be a rarity. She'd be a sweet and harmless-looking deer lady working at the local bakery by day, fighting to save the world by night.

I'll knock out the easy ones first, Selina is a cat (duh) and Sam is a falcon (again, duh). In Selina's case, it's an alley cat with a fair bit of Siamese in it, because aesthetics. Sam is the falcon for sharpness in perception and fierceness in loyalty.

Rollo is a bear. Canon points towards him being a bear at least once if not a few times. And he likes naps.

Touji is a laughing wolf. Again, canon description.

Amelia refuses to be anything but a dragon. If I had to force the issue, I'd say a lioness as she is fierce and likes to relax when able.

Hank is a weird one. I'm tempted to say a raccoon because his mind is always busy but that doesn't seem to fit him aesthetically. Some ape more like.

Ahsoka gets a convor (for canon reasons), which are a kind of owl like bird. Insightful creatures that appear throughout the Clone Wars show, suggesting Ahsoka's presence throughout the canon.

Sabine will get a momong head. Colorful, monkey like critters that are fast and nimble as well as seemingly crafty.

Eliot gets the head of a standard poodle, although an Afghan wolfhound is tempting. Loyal to those who gain his favor and fabulous to look at.

Izana I am not sure. A sika deer perhaps?

Lois is some kind of mammal that gets into everything. Cat or ferret or dog of some kind are my top three instincts (and 'what breed of dog' leads to a long discussion in my head as I used to research dog breeds for fun when I was a kid).
