Thursday DE: I wanna rock n roll all night
Your character is starting a band. Yes, even if it’s something they would never do. What’s it called, what kind of music do they play, what does your character do in it?

They're moderately successful, in that they hold gigs in clubs around Tokyo and at one point competed in an Odaiba music competition (which was interrupted by a Digimon attack), but it's made pretty clear by 02's epilogue that they never go professional. Yamato plays bass guitar and is lead singer for both.
For Eden, the Leopardos kids might try to start a band, but it'd swiftly devolve into chaos. They'd all be playing their keyblades like musical instruments, and in Eden's case, that instrument would be the saxophone. He would insist on a lengthy sax solo.

Floki would most likely be in a forest metal band with an Old Norse name referring to Odin and blood and sacrifice or something.

Cassidy is actually a Pogues fan in the comics, but the thing is, I imagine him partying with Shane and getting completely shitfaced together and then only realizing long afterwards who he was.

Evelyn would probably actually be on flute or something. Something that fades a little into the background and keeps her from having to speak.
Lois would so on the vocals. Rocking out. Either modern off-beat pop (once into canon proper) or 80s covers. Her friend Maddy (of canon proper) would be the one choosing. Lois would also insist she's back-up vocals, and then end up not. And probably also on lyrics! Come on, it's Lois, you know she would. (And her long-distance friend does the editing...)
R2-D2 would be involved in techno and either doing back-up/beat-boxing and/or post-production editing.
Anakin probably cannot manage not to be on lead guitar in rock stuff (because he hates cantina music actually). He's Anakin. That said? All I have to say is he would also, later, play jazz. Just go, it's worth it.
Tavi-- look, I have headcanon that while he's not tone-deaf he's basically indifferent, and this is because I need to separate him from me more. This is really hard for me to answer! Kitai's the musical one. ... Oh fine. Give Tavi percussion, he would find it super-intriguing actually and he doesn't have to deal with melody. Except then he starts caring about theory and getting interested in the structure and probably picks up piano just to work out the underlying principles. God help us all. At least he'll never be classical-concert quality pianist. (He would also be interested in editing. ... Look just keep him away. For all reasons.) (He probably has a perfectly serviceable voice and zero interest in singing, rather to Kitai's dismay.)
As for me? HAH. I hope to one day be on mandolin, with folk and folk-fan-music and Celtic-rock and maybe just actual rock for fun! I've done jazz piano, and could go back to it or otherwise rhythm section piano with other work and would LOVE it! Also, jazz or rock flute is so underrated and I would love going back to that. And vocals, man, I adore singing so much that it's part of why I want to pick up mandolin properly so badly. It's freaking hard to haul around even a keyboard, let alone a piano proper. But mandolin! I don't want guitar, too large for my liking. I'd put that consideration aside for a lute, though. Lute would be awesome. And I could still sing with it!
And I'm hoping that by the time I'm ready for that kind of performing I'll also be okay at the lyrics and composing so I can just. Write fan-songs and sing them at conventions in silly fan-rooms and maybe talk them into letting me have a tiny half-hour presentation and have a tiny claim to awesomeness. I already have one song, at least! It's heavily borrowed from another song, as many filks are, but it's still a DA:I filk! OH! And a You Are My Sunshine. Except it's You Are My Jedi. About Rey.

They aren't shy about trying anything which kind of drives their label nuts as they have no idea how to market it. Eventually they get enough of a following that the label just throws up its metaphorical hands and sells them as a brand. Ahsoka will play anything she can get her hand on but is best with percussion and wind instruments. I'm getting the sense that while she doesn't mind electronic instruments as a rule, she prefers more traditional fair for herself.
I think Sabine will be like Pet Shop Boys or Daft Punk in that she's more a DJ who ends up making her own music. If the Ghost crew were their own band, I think Sabine would be on the synthesizer and making all the sample for the band. Hmmm, Zeb on drums, Kanan on guitar and singing, Hera on bass and acting manager? But then that leaves Chopper...

Chopper can also help with samples with Sabine and I can see them getting along and then grumping at each other all the time.
I kind of like the idea of Ezra trying to do keyboards too, just for more friction.
Sabine does all the band's art though and I refuse to budge on this. :D

I'm sure someone has written a band AU for Rogue One but okay, Bodhi and Jyn switch for lead vocals, Baze and Chirrut do instrumentals, it changes as they both know so many instruments. Cassian starts out as manager and sometime songwriter until one time Chirrut hears him singing and pushes him out on stage. It turns out they needed his voice on stage. Their style of music is a fascinating fusion of different styles but at its heart is protest music. They often have arguments about which language to use for which songs, Jyn's the tiebreaker usually between Bodhi's Urdu and Cassian's Spanish. They're called Not Your Rebel.
For Charles, he and Erik argue about what sort of music to play, Charles prefers stuff like Frank Sinatra while Erik wants to do harder rock and blues. The make up of their two bands are always shifting but the two of them are always near the front.
Miles is the front man of two bands, the Dendarii and the Vorkosigan. Ivan's on backing vocals, sometimes guitar. Dendarii is always pushing the musical limits while the Vorkosigan is more traditional.
Demeter and Kore are a mother and daughter pair that sing in French and Greek.
Moist is a background vocalist who's been in so many bands that people will go do I know this voice but forget his face.
William and his brother used to sing with their father, now they don't anymore but can still create great harmonies.
The Merry Men play traditional English songs with a rock edge, Robin's lead vocals, John and Will are on bass and guitar. Allan plays so many other instruments, Tuck is on the fiddle.
Sameth is tech on the band that's made up of his sister, parents and now Lirael.
Tumnus plays his flute and does backing vocals for the Pevensies.

Garyn would absolutely be the frontman of a grunge band in the 90s. Their sound was described in Rolling Stone as "like Alice in Chains, but heavier and more depressing."

The thing is, her deviousness would sneak right in to the music. She'd crossover into other genres so much that her fans will get into holy wars about which album was her best album and when she sold out to the industry and when she broke free from the oppressive shackles of the industry and her previous lamewad fans. And then of course she'll have a core of snobby as hell fans that "get" all her music.
She likes collaboration with horrorcore artists best, much to the dismay of large portions of her fanbase. The horrorcore community is equally horrified.
For some reason, all of it is very good workout music.
