Cyborg is super-competitive about video games, but once he is done gaming, he can let it go for a while. But I suspect he was driving everyone nuts last summer when he was playing the TitansVerse version of Pokemon Go.
Can you be competitive about justice? Poirot has a streak of that, of not merely wanting to solve mysteries but to be essentially the first to do so, on the occasions he is dealing with less-than-cooperative detectives.
Sabine is super competitive about just anything she thinks she's good at. And she will not give up. Period.
Ahsoka and Anakin have a number of competitions shown in the Clone Wars, which makes me think they challenge each other all the damn time...which I really love. I can only think of a couple of competitions, though; being the first to break through an enemies defensive position and total number of droids killed. This leads me to think she gets competitive about physical skills.
Baze gets weirdly competitive about drinking matches. This is a bad idea when his competition can purify alcohol out of her system using the Force. *cough*Ibani*cough*

Eriond doesn't. Really he doesn't. Unless he's playing with a kid, I guess, and the kid would be disappointed not to have some competition.
Evelyn really doesn't get competitive, unless it's a card game or something.
Lois gets competitive about almost anything, given the slightest hint of a challenge.
R2 is actually surprisingly competitive, but only if he deems you worthy of being in a competition with him to begin with--which is a limited set. He's glad to let it go! As long as he wins.
Anakin: see Don's note about Ahsoka. Just assume Anakin regularly gets into competitions about who can kill the most droids, or pull the most daring flight trick, etc etc. And assume he's actually pretty able to let it go! It's just a way to release tension, really.
Tavi doesn't actually do this too much, except with the people he's close enough to that letting it go is easy and it's never For Serious, it's just as a way to release some pressure. Though he and Kitai did lay some odds regarding the result of an apocalypse and whether or not she would marry him.
