- Eriond seems to be strangely lacking in titles. Probably needs to be 'Horse-God', but anyway, idk. He's pretty chill.
- Lois will get called Mad Dog Lane eventually.
- R2 thinks he deserves more titles than anyone will ever give him.
- Anakin: I think it's still canon and not just legends that at some point during the war he gets called the Hero with No Fear (I know, laugh it up; it's in the novelization I think so canon applies). Also, you know. Darth Vader.
- Evelyn: Herald of Andraste, Inquisitor are the first two to come to mind. I'd need to replay the entire game and comb through for others. I'm absolutely sure there are others.
- Tavi: Tavar (Canish for super-wolverine) is already somewhere between an epithet and a nickname. And he is definitely not the one to tack Magnus onto the end of his name in history books (guarantee you if anyone tries that during his lifetime his reaction is going to be have you lost your mind, what, no). So yeah. He went through a few other names/titles/epithets on the way! But he ends up with Gaius Tavarus Magnus, First Lord of Alera.

Sameth is Wallmaker and Prince of the Old Kingdom.
Quentin is squire to Sir October Daye and foster to the Duchy of Shadowed Hills, he has another title but that's a spoiler for later in the books.
Ivan is an officer in the Barrayaran army and a Lord, not of anyplace just a Lord by virtue of birth. Miles' donkey and Ivan, you idiot are ones he's called a lot in canon.
Cassian's main title is Captain and also being an Intelligence officer. I love the idea of him being known as something else but I don't know what. I have so many thoughts about Rogue One and how they become part of the history of the Rebellion and especially later influence someone like Poe Dameron. But Cassian is also incredibly reserved and private about his work so I think even in the Rebellion, what he does isn't known until he's gone. He also has various covers with different names, canon reference only mentions a few but I headcanon there are more that are simpler.
Charles has a phd which gives him a title and he's known as the founder of the X-Men, Xavier's school, then to create some of my own that fit him, he's user of Cerebro, finder of lost mutants.
Moist has lots of aliases but no titles though when canon comes along he becomes Postmaster General.
William doesn't have any but I've always figured that because of what happened in Yuma, there are whispers around him. They might not fit into epithets but something like 'he got Wade on the train'.
Demeter has so many names, let me go find them because Greek mythology is wonderful for them: the spender of gifts, the angry or terrifying, fruitbearer, the blooming, goddess of the earth, protectress of the fields, goddess of mills, giver of food, law giver. All of these are Greek and from theoi.com and don't include Roman variations when she's Ceres.
Tumnus is advisor to the throne but doesn't have a specific title. Though I imagine he's known as the one who met Queen Lucy and things like that.

Sinric is the Wanderer. Again, he could earn other names, giving the power he has as a seer but as he understands the costs of his powers more, he's less inclined to use them outside Milliways.
Bodhi's just The Pilot. And he's okay with that. As with Cassian, it would be nice to think he was remembered by the time of the resistance.

In the current era, Devourer is most common, and it is way more common than her own name.
Her alter-egos also tend to get epithets too, like Keli Raven has sort of gained notoriety on the seas as Captain Keli the Sand-Witch but later on that will change to the more respectable Lady Keli, Pirate and International Crime-boss Extraordinaire. Sarah Black (her Milliways cover) hasn't gotten any epithets, I don't think, unless Autor (Or Yrael) want to chime in.
Fairy Fixit only has her professional title, and it has been a while since I have typed it out so I may be inconsistent about it, but it's Lead Teleportation Network Engineer, Zanaris Division, Abyssal Services Department. She's got her Doctorate so I suppose she is technically Dr. Fixit or Dr. Fairy Fixit, but the casual use of the doctor title isn't all that common. Only mad scientists and a few medical doctors insist on the title.
