Wilford plays baseball because his parents thought getting him in sports would solve his behaviour issues. He wanted to play something cool, like hockey, but his mom was worried he'd get hurt, so they put him in Little League instead. While he would up enjoying it, it didn't fix a damn thing, and just gave him a new weapon to smash things with. He played through college, but quit when he realised it was getting in the way of getting his degree.
Ahsoka: She has trouble connecting with her native culture. I'm taking this from how often I've tried to add in details of her species and their culture to her story and how it never seems to work.
Hank: Loves music and is a total audiophile. I haven't played too much with this, but he loves finding new music.
Selina: Has a learning disability called dysgraphia and so avoids writing notes and things. (Many thanks to Fractalmuses for helping me find a good disability that fits Selina's future story.)
Sam: His cousin made his wings. When they were kids, she'd lost her father and after the funeral, Sam stayed with her and helped her feel better. As a kid, she decided Sam was an angel and she'd give him wings. She'd toyed with the idea off and on into college and when Stark Industries saw her design, they hired her and the rest is history.
Sabine: She loves to listen to music and plays it on her helmet speakers, even on missions. Yes, she has her own soundtrack. She also has been know to forget she's wearing her armor and has even slept in it.
Danny's meta might be a spoiler, so I'll just say his being allowed to compete for the Iron Fist has a reason that has nothing to do with his skills at the time. I'm debating having him find this out at a later time, cause, man, that would shake his foundations.

Tybalt has seen Shakespeare performed by the original production company. He also *loves* theater and is secretly a Shakespeare fanboi.
Cassian was given his flight vest by the man who taught him how to fly who was a former pilot in the Republic. That's why it has the yellow on it. He always puts it on when he's flying, its the only truly superstitious thing that he does.
Quentin is always disappointed in maple syrup in the US and can always tell you hockey scores for the teams he cares about.
Charles misses having access to the Oxford libraries and is currently has a very good relationship with the librarians of the Westchester library system to keep up with his scientific journals.
William always has a book on him, his mother has learned to make his jacket pockets slightly bigger than Mark's because of this.
Sameth works best at night, his ideas tend to come when he should be sleeping. In the palace, they've accepted this, it still confuses new guards who travel with him when the prince is up late with a spelled light working.
Ivan enjoys shopping with his mother, it was one of those times when he was younger that it was really just them. He would listen to her talk and order fabrics and loved watching what she knew. Also the owners of the various shops would always provide delicious tea and weren't interested in him for political stuff.
Moist loves the detail required for forging, he finds something calming in the process.
Will S. misses being a thief sometimes because he enjoyed the skill required and seeing what he could do.
Demeter for all that she loves living in France and their wine, she still has retsina from Greece and loves it. Many a small family owned vineyard in Greece is still going because of her and others in her family.

I'm still on the fence on whether or not he actually has gotten surgery/owes GeneCo money (and if he did, what surgery it was). On the one hand he's the narrator and kind of outside the narrative of his own movie, so it might make sense that he's apart from all the danger, but on the other hand he has a few lines that implies that he's just as screwed as everyone else ("And none of us are free from this horror, for many years ago we all fell in debt!").
Hera - As is typical for Twi'leks, she prefers foods that are very bitter or spicy. Most food that is palatable for humans tastes bland to her, and she doesn't really like sweets, aside from some sweet fruits. - She's a decent dancer and learned to dance when she was young, but her real talent is singing. Hera has a beautiful singing voice, and she loves to sing, but you're unlikely to ever, ever catch her at it.
Kanan - He's a lot more directed now than he would have been as a Jedi. His personal satisfaction in the work he's doing in the Rebellion is a lot higher than it would have been, not least because Jedi don't really . . .deal in personal satisfaction? Sometimes he freaks himself out a little by being glad Caleb is dead. - He has the ponytail because his bedhead is crazy and he doesn't want to deal. (ftr Hera thinks his bedhead is cute)
Sahaal likes heavy metal. Metallica's For Whom The Bell Tolls is the first proper song he ever heard, and he's loved it ever since. He does have a soft spot for punk rock, though.
None of Cassidy's tattoos mean anything to him. They may look meaningful and some of them even say meaningful things (such as "Be as you wish to seem" and "Right is right wherever you are or whoever you're with" are my favorites) but he just got them all because they looked cool.
