Oh I like this...
Ahsoka: Slice of life shots of the clones and Anakin. They aren't always embarrassing shots either.

Sabine: Her shots would be of anything artistic and colorful. Some might be of her explosions if she can figure out how.

Sam: Mostly people. I can see him doing something like the humansofnewyork blog.

Selina: All the places she gets herself. Think of those photos people take of really high places they shouldn't be.

Danny: I think his would be very touristy and of his journey towards New York.

Hank: Would've taken his apart to learn how to make his own. OK, had he actually taken pictures, I can see him taking reference photos of the grounds of the mansion for planning and engineering of the things mutants would need to learn to use their powers.

Tybalt: He would've given the camera to Raj as he doesn't do modern tech too well. Raj takes as many embarrassing pictures of his friends as he can. Sorry Quentin.

Emcee: He'd save it for a party or a night out at a club and take pictures of people enjoying themselves. He'd also try to take selfies, and they usually end up artistically off-center with something going on in the background.

Pam: She'd take pictures of herself in the mirror wearing different outfits. She can easily fill the entire roll with them. Possibly her collection of shoes as well.

Floki: I imagine at first a bunch of blurry, crooked shots of water and trees and like half of Helga's face, but then they progressively get better. He'd definitely go around Kattegat and take pictures of every mundane thing, from chickens and goats at the marketplace to the ships docked in the bay.

Cassidy: There isn't much to see in Annville, Texas. He'll take shots of the old church's interior, views of the desert nothingness from the church's attic where he's currently residing, Jesse as he gives a sermon, people at the congregation. I don't think pictures are allowed at the whorehouse or the strip club.

Amascut's camera roll would be boring, at least superficially. Tons of unredacted documents and surveillance photos. <.< >.>

Fairy Fixit's camera roll would be interesting. I imagine it would feature her friends and coworkers, customers, and some of the more exotic places that her work takes her. So, lots of different sapient species, alien environments, and occasional attempts to photograph non-Euclidean geometries.

Mostly pictures of his thumb, but he'd try to take pictures of Chirrut--training, eating, sleeping. Baze would get a kick out of it, but Chirrut wouldn't get the appeal.
