Kylo, anything to do with his parents and most of his life before he left for good.
Sikozu's a pretty open book. She'll talk about anything.

Pam: her life as a human, because it sucked.
Floki: if he can really hear the gods speak to him or if it's just madness.
Cassidy: how he was turned into a vampire (OOCly because I'm not sure how canon will be handled, but it was pretty fucking traumatic anyway).

Beyond that... there are things she won't necessarily volunteer information about, like her relationship with her father or some other aspects of her childhood/her activities before she met Kanan. But she would answer questions about it if asked.
Kanan, like Hera, is going to be careful when talking about their work against the Empire. Aside from that, he has up until this point been completely unwilling to acknowledge his Jedi past with anyone beyond those he absolutely has to (so Hera, though he initially revealed it to her because he had to use Force powers to save her, and then later Zeb and Sabine). Now that he's revealed himself to the Empire this is going to... matter less, because the worst has pretty much happened. But he's still very unwilling to actually talk about his time growing up in the Jedi Temple. He thinks of the person who lived that life as a different person, and one he doesn't think about more than he has to.
(That's also going to have to change has he trains Ezra, but. Even during that training, he very rarely talked about his specific experiences as a youngling/padawan.)

Ahsoka: The Jedi and all the misconceptions people have about them.

1) his lack of faith. Baze hurt his friend for twenty years. It's not something he's proud of.
2) the occupation years in general. Baze is happy, now. He has no desire to relive the last two decades.
3) the destruction of Jedha. Full stop. I think, of the bar denizens, he's only told Barry and Ibani.
4) his connection to the Force. This refers back to his lack of faith. Baze will gladly explain what the Force is, but he won't go any deeper than that. He doesn't feel he deserves to wax poetic, since he turned his back on it for so long.

Cassian, its talking about himself, his past and the exact work he does for the Rebellion. He'll talk around the Rebellion and even bring it up in subtle ways as he does work as a recruiter, but he's basically given himself over to it. So he's incredibly skittish about talking about his personal life more than flying and fighting.
Quentin, also his personal life, he has secrets that he's careful with, his own and others. He'll distract you with talk of hockey and food.
Charles, his own pain, he'd rather talk science or mutants. If asked by someone he trusts, he'll address it but always be moving the conversation to other topics.
Sameth, how he feels about Death, he's less afraid but it makes him aware of how he's different from the rest of his family.
William, how his father died, those few days of dealing with Ben Wade, they're grey and complicated. Also his expectations for himself, at this point he sees himself as a rancher and can't imagine another option.
Will S., his younger life before he connected with Robin and his torture, what it took to bring the Sheriff down.
Moist, anything true about him but especially growing up in Uberwald.
Ivan, what it actually means to be related to who he is. He'll talk social stuff and about politics but always avoid his place in it.
Demeter, her daughter's kidnapping, the details of it.
