Bastion could get along fine for quite a while bringing nothing at all. Their model is very self-sufficient thanks to the long-lasting power supply and self-repair/internal fabrication nanobots. Which is just as well, since they'd have some difficulty carrying a pack. But eventually they'd need to recharge and/or refuel, because power is their main material need. (They can mostly subsume their maintenance needs into that via their self-repair function, but it's less effective than an actual technician with a full set of proper tools.) So a solar charger and a jug of omnic fuel would be very useful if they were planning to abscond into the wilderness, and some oil to self-administer would help too.
Stimpaks, Rad-X, Rad-Away, a wad of absorbent fabric, a bottle of clean water, a respectably sized knife, at least one projectile weapon, I'm assuming she's going to be wearing basic combat armor instead of having to put that in her backpack, a compass, some kind of MRE-like preparation of food, and a helmet. Because if Ellen's time in the Capital Wastes before joining the Brotherhood taught her anything it's that you can't count on finding head protection when you need it unless you bring it yourself.
