Baze has never been on a vacation, unless you count his unlife in Milliways. He reads, and whittles, and works on his lightbow, and helps Chirrut with his tea plants, and does staff forms, and leans the waitrats' language, and any number of other things. Baze is thoroughly entertained here, and never bored.
As far as holidays go, back on Jedha there were harvest festivals, wherein Baze stuffed himself with candied popcorn and roast pumpkin, and performed for the tourists. After the occupation, there was Empire Day, wherein Baze decorated with the entrails of his enemies--by which I mean, he kept his head down and tried not to attract attention.
Autor has also never had a vacation. He used to read, though now he doesn't have the focus to do much of that. He finds knitting easier than reading nowadays.
Ahsoka and Sabine don't get vacations. Ahsoka might get the occasional downtime or sent back to the Temple to cool her heels, during which she'll likely be doing anything to keep herself busy while impatiently waiting for the time she can back in action. Sabine just gets downtime and likely spends it doing repairs or making art.
Sam goes anywhere relaxing. He's good with most climates or cultures but he would be just as content volunteering somewhere that needs help.
Tybalt would claim a king needs no vacation, and that sort of true, though it's less needs and more can't take a vacation. He is in some serious need of one, but his people need him. As to where he would go or do if he could take one...hard to say as just his presence in other kingdoms is a politic thing that could be a declaration of war. Regardless, he'd spend the time with Toby.
Danny would spend his time in New York City, reacquainting himself with his home town.
Wilford's never taken a proper vacation willingly. They tend to happen because he's too ill or injured to do anything, let alone work, or because something is happening within the network that he's not able to work. In the case of the former, his time off is spent in bed, feeling miserable. In the latter, he just wanders around trying to find fun for himself, which tends to get him into more trouble than it was worth.
