For Ellen, on the good days, it's some degree of faith; despite living in a post-nuclear hellhole she believes in God, and believes that he acts in the world, albeit through subtle influence and coincidence more than direct action. She's met several actual gods in Milliways and at least one or two demigods, plus a few people of other species/races who were treated as gods by human history, and has done battle against an evil disembodied psyker brain in a jar with physical assistance from an actual angel of the Lord, so she's fine with believing even though her world's kind of a hell pit.
On the bad days it's spite. Dad was an irresponsible deceiver with an overwhelming level of unfounded optimism about human nature and a tendency to assume that whatever wonderful dream he had would be implemented and handled by other people. Ellen is not going to let people say that she's just like her father. SHE WILL DO THE THING THAT NEEDS TO BE DONE HERSELF.
In general, an over developed sense of adventure and a competitive streak that only Anakin exceeds. Sometimes it's spite in a "I will not give in to you" way.
On the Trandoshan moon it was the needs of the other padawans as well as her own desire to survive. Training plays a big part as well.
Her firm belief that the galaxy deserves better.
And in those moments when she has nothing else, the Force.
His desire to make Chirrut happy. And, recently, his faith in the Force. It used to be spite and the desire to kill as many stormtroopers as possible, but he's content now, being dead.
X: Knowing she has to keep people safe, and knowing that she can contribute to making the world a better place locally and also . . . multiversally.
Ysalwen: Love. For as many people as she can fit in her heart. And, you know, rage at injustice. Love and rage, that's about right.
Sombra: She's going to bring it all down. Or, you know, bring down all the people currently running it and replace them with herself. (Definitely that last one. But the first sounds so inspiring, you know?)
Emcee: the desire to bring other people pleasure (whether through sex, entertainment, parties, etc.)
Cassidy: the next big thrill or sensory overload, but having people in his life who he cares about also motivates him to be something other than self-destructive.

So, faith and spite.
