I'm pretty sure the original questions was more what types of caffeinated drinks do they like, but hey, not everyone goes that way.
Does your character use stimulants? If so, what kind?

Rose may try coffee eventually, but she won't like it. She does drink a lot of soda.
Kylo drinks caf, but it's only now and then.
Creed'll drink coffee in the morning, but that's about it.

Sabine: Caf and likely bad caf at that, but beggars nor insurrectionists can be choosers. I keep meaning to have her discover raktajino some time. While I am certain she's also tried stronger stims, I don't think she likes them much. They'd make her too jittery and she relies on a steady hand too much for that.
Sam: Coffee. He doesn't do other things and I can see him as a cappuccino guy if he has a choice.
Hank: Another coffee drinker. He hasn't discovered the fancy stuff yet, but I'm sure he will fall head over heels in love with it when he does.
Danny: Tea and soda. Canon has him saying he's never had coffee but I'm not sure I can see this given his travels through Northern Africa to get to America. Thus I haven't decided if he's had Turkish coffee yet or not.
Izana: Tea all the way. They might go for sodas from time to time, but tea is their go to.
Tybalt has only recently come to appreciate coffee and that is because of Toby. I think he's didn't appreciate the taste very much before or something. I'm also can't think of anytime in canon that he is shown drinking any sort of stimulant, so I don't know. I can see him liking sodas as he has a sweet tooth.

Lois: Will one day be a coffee addict.
Evelyn: Sometimes has tea? Doesn't really do this I think.
R2: Actually doesn't like overclocking himself unless it's specifically at Anakin or Luke or Leia's request (probably also later Rey but they need more bonding time, yo), with specific understanding one of those them is on hand for repairs if something goes wrong, because if something goes wrong someone other than them might try to fix him and might try to wipe him or will otherwise screw something up. So... yeah. Absolutely will do this, so long as his preferred maintainers are around in case he needs to push too far.
Anakin: Claims he does not. This is false. Definitely uses stims too much sometimes during the height of the Clone Wars, and probably especially during those days he kept having awful nightmares about Padme dying in childbirth. Which, you know, also contributed to his not sleeping during those days. Yep, drugs definitely helped contribute to that psychotic break. Caf or tea sometimes but not his favorites and not for the purpose caffeine as such.
Vader: I honestly have no idea if anyone manages to put anything in his life support systems. I don't think he wants it. But like, Palpatine might.
Tavi: ha ha ha ha okay so caffeine absolutely, tea at home and in Milliways and coffee in Milliways. He doesn't actually touch other stimulants, unless you count metalcrafting to power through without needing as much sleep. Look he has some trauma associated with the most socially acceptable and accessible stimulant--and one that honestly in moderation isn't particularly bad, I suspect, but...--so he actively refuses to touch it, which is probably a good thing. I expect one of his kids might drink spicewine some until they hear the Story about why their dad is so touchy on the subject and be like ooooh yeah okay right uh not really rational and not my problem but maybe I'll listen and not do particularly stupid things.

Zecora: Grows, blends, and sells an assortment of teas,
and does quite well at it, if you please.

Orpheus will take whatever stimulants a situation requires, but mostly he drinks coffee as well.
I'm not sure the Rohirrim have anything that might be considered more stimulating than a strong tea.

Pam: fresh blood right from the vein is really stimulating.
Cassidy: you name it, he's taken it.
Floki: there's that psychotropic thing that warriors ingest before going into battle that turns them into berserkers, and while Floki is not that viking exactly, I'm sure he takes a bit of it as a matter of ritual.
(Btw, sorry for the slowtimes and the disappearing, I've not been feeling 100% but maybe this week will be better.)
