Yamato tends to try to apologise to people he's wronged at the earliest opportunity, or at least as soon as his pride and awkwardness permits him to, so right now the answer would be 'Taichi,' the wrongdoing would be 'being silently menacing for several weeks and then pinning him to a locker to angrily demand answers from him' and the definition of 'past' would be 'approximately eight to twelve weeks ago.'
But in the future, he'll be able to add his calligraphy teacher, Nishijima, to the list, for the wrongdoing of 'accidentally contributing to him falling into a ravine and being buried by an avalanche,' but won't be immediately and effectively able to make amends on account of Nishijima having died from injuries sustained while falling into a ravine and being buried by an avalanche.
There are so many people that were wronged by Aang's actions, that it's kind of hard to choose just one. But if he could choose one, he'd most certainly take the opportunity...if presented.
Most of the people Hera would feel this way about are dead, and while at least in my headcanon she has her own way of honoring those dead, she doesn't invest much energy in the thought of making amends with them. She can't bring them back. There's no making amends for that. Which is something she'd needed to accept pretty early in life.
There are also some people for whom - they're not dead, but they also got pulled into her work, and while she usually made efforts to leave on decent terms... again, if she could repair the damage (and there's always damage), she would. But usually, she can't.
Of course she could call her father but...............
Kanan, similarly - a lot of them are dead. He's more pulled at the idea of somehow still making amends, but. There are also some people that he abruptly left while still on the run, and in retrospect he wishes he could at least, make up for that in some way. Leaving so suddenly without a trace. But he doesn't think coming back and explaining himself would really do them any good.
I feel like the entity he most feels the needs to make amends with, and that needs to make amends with him, is the Jedi Order as a whole.
