Ahsoka collects contacts. Seriously, she meets just about everyone who was important in the Clone Wars and beyond. She even met Chewie. It's debatable if she met Leia.

Sabine: explosives and art supplies? Not really getting an answer from her.

Danny: bad decisions music! He's not much of a material guy.

Viv doesn't collect anything either, although now I am wondering if her gaming avatars don't collect things. Now I want to say she collects bunnies and bunny things from the online games she plays. Regardless, nothing canon.

Emcee doesn't really collect anything, but I think as he visits modern-day Berlin more often, he'll have an affinity for t-shirts and tank tops with sassy quotes or images on them.

Cassidy collects clothing. Just random clothing. A shirt here, a jacket there. Doesn't matter from who or where. Since he's always on the move, he doesn't have a set wardrobe, so it keeps changing. Also, umbrellas. The longer he stays in one place, the more umbrellas he'll accumulate.

Pam collects shoes. Stupidly expensive shoes.

Kazul is a bit of a hoarder. I'm sure she has a bunch of minor collections, but mostly it's just a heap of cool and/or interesting and/or expensive stuff she happened to acquire, as dragons do, and then pitched into a cave until she hired an unconventional princess to organize it all for her.

I don't think any of my others do. Enjolras, certainly not, and Thor doesn't seem particularly covetous of stuff, and Cosette cares about making things pretty but I don't think she has a specific collection theme for it.

Yeah, sort of. Sahaal collects trophies from his kills, so it's not any one thing. More whatever belonged to them that he likes the look of.
