Oh look, I have an icon or two.
I don't think I ever decided on a daemon for Fairy Fixit. A moth or some insect would be too on the nose. A beaver, perhaps?

Sabine seems to have an anooba, but I don't have a name or personality.
Sam, of course, has a brown falcon named Redwing. Not sure of personality.
Before I'd given Hank a raccoon named Sherazade. She is bold and adventurous, as well as being something of a prankster.
Dog does not compute for this one, though I could see an AU where she's Lirael's daemon.
I am honestly not certain Viv would have a daemon, given she is an artificial being, but I love the idea of her having a bee hummingbird as a daemon for some reason. Again, I am failing at a name or personality.
Danny...I just got the mental image of Danny's daemon being Mu Shu from Disney's Mulan and I can not stop laughing.
Tybalt is a creature of Faerie and daemons don't compute....then again I love the image of a tiny gryffon perched on his shoulder. She'd be cheerful and bubbly to his grace and poise. ETA: Or a rose goblin! Man, that would tweak the nose of the Torquels. ; p
Lastly, Jessica Drew...who I will EP someday...has a tiny peacock spider. His name is Gary for some reason and he is sounding like one of Michael Meyers's Scottish characters. I don't know....

Varric's is a particularly smug-looking vixen who I don't think I have a name for.
Stacker Pentecost's is an osprey. Not sure about her name either.
Adrian Shephard's is a hive of bees named Imre. All of them, since as far as he's concerned the entire population of the hive is a single organism.
Fawkes' daemon is a hippo named Ennoia.
I am not sure about Peter/Quicksilver but I am almost convinced it is some particularly squeaky species of hummingbird, because I've watched the really small ones at feeders and they're basically aggressive little shits that beat up on each other at high speed, making Looney Toons squeaking noises the whole time.

I think Cassian's daemon would be a bird of some kind, one of the smaller raptors that's fast and clever.
Will Scarlett's is a red fox.
For Sameth, at one point I thought perhaps a beaver or a badger, a clever but not terribly showy creature.
For the rest, I have no idea and would love suggestions. Also I just finished rereading Goldenhand so I'm hoping to play Sameth more, I'd forgotten how he's not given a lot to do in the book, but more space for me to expand.

If goddesses have daemons, Hedda Winchell/Pheme/Rumor's daemon would absolutely be one of those large, blue-and-gold macaws.
Yrael's daemon would be a white cat, who is also himself.

Of my nonhuman characters, trolls' lusii already fill the animal-symbolism niche for them (Aradia's is some kind of kangaroo-sheep thingy, Cirava's is unseen but implied to be a giant wasp or maybe a colony of regular size wasps), and Ganymede fills the animal-companion niche enough that I've seen it suggested that in a daemonverse he is Bastion's daemon.
Whether omnics in general would/could have daemons is an interesting question; they might not for thematic reasons, since it would be harder for humans to insist that they're soulless machines (as they often do in the Overwatch universe) if they did, and while it's been a long time since I read HDM I seem to recall that the armored bears are daemonless sapient beings so there's a precedent for it.

Khadgar's is maybe a magpie or crow? Corvids are a heavy theme with Khadgar, his master's being that of a raven. Khadgar, though, is much more social and the mimicry magpies can perform seems to suit him better than the raucous cawing of crows.
I'll have to think about both of these.
