Also they can easily empathise with the people who need it, since they were in that position when they escaped from prison. Other than that, they occasionally make charitable donations when they feel guilty about their more unsavory deeds or when they're trying to seem upstanding, but they're more heartfelt about helping out when they actually see something bad happening to somebody.

This is a good question. I'm currently reading a really good romance novel where the hero is a Jewish conman and the heroine is a rich patron of her town. They have lots of complex talks about charity, what actually helps and what matters from both sides of the equation. Its called True Pretenses by Rose Lerner, highly recommended. Its also hitting a lot of tropes I adore of people who wear masks then connect with the person who sees behind the mask and likes what they see.
A lot of what the Rebellion does is connected to relief efforts, those are the jobs Cassian likes best. Getting refugees travel passes to someplace like Alderaan. Bail tends to control that part of the Rebellion, but it threads through everything they do. Also a great book for taking on how relief and charity was done during the fight against the Empire is Leia, Princess of Alderaan by Claudia Gray. As one of the things that Leia does is try to bring relief to a planet that the Empire hurt.
Charles gives away to so many charities, they're constantly changing depending on who he's talking to but he tries to help.
For Quentin, I'm not actually sure where charity fits into the world of the Fae since I think its complicated.
Ivan's often gone to various benefits for charity organizations since that's part of being a Vor lord and his mother's son. I think he has a special place in his heart for ones for orphans.
Will's life with Robin was tied to helping the people of Nottingham and now as the lord, Robin and his men are able to change things to actually help.
Demeter is constantly giving though for her is about here's more food, here your crops and family will be healthy, that kind of care.
Moist is good at pretending to be someone who is the right kind of generous.
William and his family, I think actually probably do give some money to their church or to decorate graves, but are sensitive for themselves.
Sameth, hm, charity has never really come up a lot in the books. I think the royal family does their best to make sure everyone has a home and food and are safe.
Tumnus is connected to the Pevensies who I think like the royal family of the Old Kingdom want everyone in Narnia to be safe and healthy. So there might not be specific charities, its more watching over their people.
Sabine did work to give supplies to those whom the Empire displaced on Lothal. Now she's hoping to spend more time in preventative action. ; p
Ahsoka, in Rebels era, works to get supplies to refugees and those displaced by the Empire. She also works to get supplies and intel to those who are working against the Empire.
Sam is all about any organization that legitimately benefits veterans. I now have the head canon that he vets such organizations on his Twitter and getting his recommendation is high praise.
Danny isn't really at a place where he can think of who to give to, but he's willing to give to anyone in need, even the clothes on his back.
Tybalt's answer is much like Fi's for Quentin. Most of his resources are tied up in the Court of Cats though.
The Ghost crew does a considerable amount of relief work, often at serious cost to themselves, considering that up until recently they really relied on paying jobs to get along themselves. Hera's early work in particular was often more focused on relief work (that also happened to undermine the Empire), before she became really devoted to an armed struggle. I'd imagine that most legally operating charities and relief agencies in the galaxy operate with the permission of the Empire, which would mean at least for those like the Ghost crew, they can't be trusted unless proven otherwise. There's a definite tendency on the part of the Empire to use relief efforts as avenues for control and espionage.
(Which, I mean, the Rebellion does the latter too. There doesn't seem to be any neutral Red Cross-like entity.)
I'm fairly certain Khadgar is a major patron of the Stormwind and Shattrath orphanages, being one himself. Or equivalent to one. It's not exactly clear how he got...I think 'donated' is the word used, donated to the Kirin Tor, but either it was his parents or the orphanage that gave him up.

I've seen some fan interpretations of him that like to think he's involved with anti-slavery stuff while with the Jedi, but bluntly, I don't have any canonical reason to think he actually did. He mostly cares in as much as his duties as a Jedi--or, later, Sith, frankly--sometimes involve him flying ships on relief efforts or protecting people doing that work. As a Jedi he definitely does care about it a lot, in that he wants it to happen... but also he'd rather be flying combat than supply runs so like eh.

It's post-apocalypse and he's rebuilding civilization, and he's mired in making sure people have enough to eat and other necessary supplies and in anti-slavery work and reconstruction efforts and... literally everything in his life is relief efforts, these days.
