Ahsoka: I'd say her destiny is to persist. (My snarky answer was to survive, given how many people were so sure she had to die.) I think she's also the fulcrum of galactic events. She's not the driving force, but she's there to tip the forces to where they need to go. She also seems to protect or have a hand in protecting those who are the heroes, so that they may go on and do the things what need doing.
Emcee: to represent the carefree, hedonistic side of Berlin and to die at the hands of Nazis at its downfall
Pam: to be loyal to Eric Northman, and to defend and protect him when his plans go wrong (what?? it happens)

Narratively, Yamato's destiny is to protect Taichi, and be his proverbial sword and shield. Alternately, his destiny is to eventually step into Taichi's shoes and go from being second-in-command to outright leader -- but canon tends more to the idea that their respective destinies are intrinsically tied up in each other, which means that in the wider scheme of things they're more likely to eventually end up leading as equals.
(And canonically, he actually is the subject of prophecy, but that's a little less interesting than narrative trends.)

The Elder Goddesses, supposedly goddesses of various aspects of time, are too far above everything to be designing destinies. To them, sentient and sapient life is a mistake; why bother unless the food supply is threatened?
There are some time travel shenanigans that give the "hero" of the story a sort of destiny, but it is an ultimately doomed one.
