1) Ghosts. Now, if Klaus started seeing them as an adult (assuming he grew to be a decently-adjusted adult), he might not be as terrified of them. Disgusted by, maybe horrified by since sometimes they're pretty gross, but... not flat-out terrified. Yay childhood PTSD. Whoo.
2) Tight/enclosed spaces. For much the same reason. The lock got stuck on one of those small gas-station single-person bathrooms once and Klaus had a full-on meltdown.
He copes with these fears by completely noping out of any situation that will keep him in contact with said triggers, if at all possible, by any means possible. Facing your fears? What a load of crap.
For Emcee, violence or the threat of violence scares him...which sounds obvious? And also kind of ironic given his physical relationship with Eric Northman, though with him the violence is controlled (ostensibly), and he knows what to expect. But for example if a fight randomly breaks out nearby, he's going to flee the scene as fast as he can. He runs away, that's what he does. Hey, it's self-preservation.
I don't think Cassidy is afraid of anything except the idea of losing people he cares about. How does he deal with that? He breaks up with them and isolates himself because yeah that's completely healthy.
Pam is the same, except there is only one person she cares about, and that's Eric, and the thought of losing him is the only thing that terrifies her. So she will fight tooth and nail to keep him in her life, everyone else be damned.
Evelyn: Templars. The Fade. Demons. Other mages. Herself. The real world. Non-mages. Tevinter. Darkspawn. Reality, pretty much. I don't know what her coping mechanism is, really, because she just kind of has no *choice* except to breathe and she actually doesn't *want* to commit suicide because it might turn someone else to blood magic and-- ... look, badly, okay, the answer is badly. Strangely, honestly, *combat* or physical danger is not... entirely what scares her? Conflict is. Losing what she loves is. That the world actively wants to hurt her is. But survival is important to her.
Lois: losing her family, being silenced. Honestly her coping mechanism is mostly go be reckless.
R2-D2: losing his family, situations where he doesn't have useful tools to supply to help. Mostly he runs from those situations and tries to find something he can usefully hack.
Anakin: Losing Padme(TM), more generally losing the people he loves, being betrayed by the people he loves. He Copes Poorly (TM). [insert facemask breathing, i'm lazy] EDIT: Oh right. Also how Anakin copes with fear: Violently. I also just want to quote Eric here: "Anakin, copes with fear so poorly it destroys galactic peace for the next century."
Derius: Losing his parents. The Vord returning and him not being ready for it. He finds a surprising amount of comfort in Marat spirituality, and also quietly looks to his parents for guidance.
Tavi: Losing Kitai or Derius. Not being able to protect the lives that rely on him. Not living up to his ideals probably out of a sense of convenience in service of a harmful/oppressive stability. Not being able to rebuild his family's legacy into something healthy and flourishing and kind, the good of what there was without the bad. He mostly copes by crying alone in the dark, sometimes leaning on Kitai and venting at her, I expect imagining conversations in his head with Alera sometimes, very rarely he leans on other people (Marcus is the most likely, or maybe other family members) and PROBLEM SOLVING IS THE ANSWER TO EVERYTHING, RIGHT??? PLAN HARDER. PLAN MOAR. PLAN FURTHER AHEAD. PLAN WITH MORE HELP. MOAR PLANZ. I HEARD YOU LIKE PLANS SO I PUT SOME PLANS IN YOUR PLANS SO YOU COULD PLAN YOUR PLANS.
Yamato seems to not have any kind of fear response at all when it comes to harm to himself, but what does make him panic is harm coming to his friends, and especially harm coming to Takeru.
He copes with it the same way he copes with a lot of things: By either ignoring it or, more likely, removing whatever is posing the problem. When Pinocchimon, one of the Dark Masters, becomes obsessed with Takeru and Yamato decides he poses a threat, he pretty quickly lets go of all of his notions of honour and fair fights and just kills Pinocchimon in a very efficient, very cold-blooded way.

Also, he's afraid of ghosts.
He's just super-afraid of ghosts, man.
