Yamato stews over things, and eventually (or immediately) lashes out. He's pretty hot-tempered, and he can lash out quite quickly given the right stimuli, but just as often he stuffs his anger down and lets it build until it all comes bursting out.
Interestingly, there is a certain point where, when he's pushed past it, his anger becomes noticeably cold and clinical. When he one-shots Pinocchimon, he definitely is angry, he's furious in fact, but he doesn't raise his voice or even really scowl, and he's pretty calculating about it, waiting until Pinocchimon is away from his soldiers and emotionally compromised before cornering him.
