With Ahsoka, I don't think the Jedi have holidays or anniversaries that they acknowledge. I can see anniversaries she'd prefer not to acknowledge, Order 66, EMpire Day, etc., but she doesn't get a choice.
Sabine celebrates her brother's birthday even if she's not with him or her family. She does her best to ignore her mother's birthday but will make art on her father's.
