Alice definitely is her username--"bet against me"...I mean you could try to bet against her but it ends badly because you know....future...seeing.

Also, "no one dressed by me ever looked like an idiot" is one of the best things she says in canon. Which, also true. :P

The Don't Starve characters come with these in canon! More or less. Everyone gets a quote on the character selection screen, and the majority of them sound like the character picked them out as a motto or catchphrase. Both Wilson's and Wormwood's got slightly changed between Don't Starve and Don't Starve Together; Wormwood's just changed the punctuation, whereas Wilson has slightly different wording but about the same meaning. I suppose I'll use the singleplayer versions, since that's the canon point both of them are coming in from.

Wilson: "I will conquer it all with the power of my MIND!"

Wormwood: "Hello. Friend?"

Cassian: Rebellions are built on hope. is probably the closest he has, at least in canon, its the phrase that's connected to him. I'm not sure that its what he would use for himself. He would probably choose something more like, "Everything has a weakness or grit can destroy the largest machine or everyone can fight."

Quentin: I'm not sure if he has a specific one but the general idea of 'Don't die, Toby."

Charles: No one is alone.

Zenigata: I will be the one to catch Lupin! His "taiho da, lupin!" or "you're under arrest" is also pretty well known for him both in fandom and canon. So something to that affect.
