Lan Zhan: NO idea

Vex: Look he's dated a sleep paralysis demon (otherwise known as a Mare in his world) it's not a big deal if they sit on his chest or anything.

The shadow creatures (also known as "Them") in Don't Starve are basically sleep paralysis demons already; they just happen to be able to follow you out of your nightmares and bite your face off in real life. Honestly I think if Wilson grew his own homemade sleep paralysis demon They'd either take it over or scare it off.

First the easy ones:
Tybalt's sleep demon would be his father, who was a petty abusive tyrant he had to kill to save their Court of Cats in Londinium. I could see a case for a bloody Toby, but that's the waking nightmare he lives with daily, so...

Jessica's is her father.

Viv's would be Eric Williams, aka Grim Reaper, who once killed her.
