Sabine associates the color with the Nite Owls.

Jess thinks of the Fantastic Four. It would be Carol but she's blue and red.

Blue isn't that significant to Yamato, save that it's the signature colour of his Crest, and thus the colour his powers glow.

Given how much the Crests loom over the larger Digital World, though, blue is Very Immediately associated with his Crest, and thus it's the colour associated with death.
