I think Ahsoka would be a restless patient but not a bothersome one.

Jess wouldn't be spending much time as a patient as she heals quickly. Not Wolverine heals quickly but much faster than normal. She would take the time to sit and do nothing I think. Bonus vacation! If she were actually uncomfortable or had folks she loved and trusted around she'd complain and whine, just for the heck of it.

I feel like Sabine would tough it out, being all stoic.

...ooooh good question.

So I spent the rest of the day sitting in A&E, finally got discharged about 8:30 when most of my test results came back....... only to have an urgent phonecall saying I had to come back to the hospital, just as I was finally about to have dinner, as I had really low haemoglobin levels.

Yeah. So I spent the night on a succession of wards, got given two blood transfusions and a selection of very interesting painkillers, and then got discharged late this afternoon (although I have to go back for an iron infusion on Friday).

So. Yay? IDEK.

For the DE question: no, Bucky is incredibly bad at being a patient. He's also very insistent on looking after those he cares for. Yes, he's aware of the hypocrisy. No, he doesn't care.
