Ahsoka is touched most by Destiny. Death would be very tempting but being the padawan of the Chosen One kind of pushes Her (i.e. Death) out. Not to mention all the hoops Filoni has to jump to keep her from interfering with movie canon.
Sabine absolutely is touched by Destruction; as an artist, as a Mandalorian, as a rebel, and all the fall out she's faced from the Empire.
Jessica seems most touched by Dream. She tends to be motivated by the dreams of things she doesn't have yet wants.
Viv...I hate to say it but Despair. Viv avoids her feelings of grief and loss, so it seems fitting. Then again it is not her main motivation. She's a tricky one now that I think about it.

Wen Qing, another for Death I think. Most of her life changes are due to deaths; the death of most of her clan, the death of her brother, the death of a Jin, and the death of what's left of her Wen clan.
Tybalt is another for Dream. The dreams of a better life--for himself and his subjects--has been a motivating factor for him since the 1600s. Plus he loves theater.
Alustin...another tricky one. Death, Destruction, and Despair are rooted deep in his heart but I think I am going to go with Desire for canon spoiler reasons.
