My first thought for Ahsoka was "regrets" followed closely by "trauma", but to play in the spirit of the DE I will say condiments & sauces because of Millicanon where Cassian shared some with her and got her hooked.

Jessica would horde deli meats, especially hams.

Alustin would horde books, though he'd happily share as long as you didn't take the book or promised to return it.

Viv is a tough one. I'd say video games but she seems to prefer online ones. Maybe DLCs or special gear for said games?

Wen Qing seems to be favoring medicinal herbs and plants.

She has a lot of keepsakes from various friends/lovers/adopted children. She also very fond of art items, jewelry, that sort of thing, rather than coins.
