Monday DE: How about I do instead?

So I've a WiP that is taking up a lot of my writing muse and time. In it, I've noticed as I write that two of the mains in the story keep shifting traits as I write; mostly their ethnicities and backgrounds. 

Taking from this, are there any details of your characters creation that you know of that you'd like to share? Like things that hit the cutting room floor that you thought were interesting, or details that haven't come up in canon yet, but you know are part of the character?

I'm aiming less for head canons here, but feel free if that's the answer you have. =)

Also, has anyone else watched Castlevania? I mainlined it this weekend and enjoyed it much more than I thought I would.
