Like sdelmonte, I use Amazon for most of the things I need. But there is one particular staple that cannot be denied:
Adagio Teas. Even if you have a local tea shop you like better for the leaves, I'm in total lust for all their hardware. There is very little I would not do to get one of their local stores in my state.
Common ones are eBay,Barnes and Noble and Christianbook.com, along with Paperbackswap, SwapaCD and SwapaDVD (being able to print postage straight on the label/wrapper is a godsend).
Amazon, sometimes, though I go there more to wishlist. Etsy, once in a blue moon, but usually I'm overwhelmed by choice there.
www.thinkgeek.com, mostly for presents. (Edit: Ohhh yes, and Adagio Teas, when I'm up for a tea splurge. There are local tea shops I love also, one of which carries my all-time favorite tea ever, but Adagio has a ton of choice.)
Usually I'm looking for something specific, and I'll often just go directly to the retailer's site for it. I do more of my shopping in person, where I can handle things as I browse, but obviously that's not always possible.
Another for Amazon (kindle and paper store), but also Googlebooks (yes you can actually buy books there) and Overstock (http://www.overstock.com/) has nearly everything and for cheap.
Coffee Fool sells the only coffee I'll willingly drink nowadays. So damn good. ;A;
For the sake of Dad's tackle box, I've dropped a bit of money on gift certificates at Gary Yamamoto's Custom Baits. They're his favorites and make great gifts for his birthday or Father's Day. Not to mention it means we're going fishing and probably drinking beer. XD
Otherwise I just search online, usually Amazon or ThinkGeek. I haven't found a culinary supply store to call home yet but I found where the school orders their blood orange puree, so I might try them to see if I like the service.
LJ eats so much of my money, Amazon gets a good amount of it, Lush and I think that's it. I oddly don't spend that much of my money online but I've had some gift money recently that I do spend online.
At the moment, I tend to buy lots of books at Borders since they give me coupons and the used bookstores in town.
Design By Humans, Threadless, Amazon, Powell's Books, Penzey's Spices, Lucky Scent, and various other sites. I prefer to shop in person, but I do spend way too much money on the sites listed above.

Otherwise, I tend to spend my money offline, at local tea shops. I ogle thinkgeek every so often but haven't ever bought anything. Ebay! For hard-to-find vintage pen nibs and inks. :D
