Barry has all of the other traits, but really it will always be Hope. His comic book counterpart even gets to join the Blue Lanterns for a short while, and their rings are powered by hope.
Life has, and will continue to, kick Barry in the teeth. A LOT. And he never, ever, ever gives up, or stops believing in what's right. His origin story could easily be one for the angstiest brooder who ever brooded and anti-heroed, but the light of hope inside him guides him true.

Sunshine's would be... possibly Love, possibly Kindness. Maybe Hope?

Eden could really only have Knowledge, because he lacks the ability to be courageous, or hopeful, or loving, etc, but he does have a pretty in-depth knowledge of KHverse metaphysics and engineering.

Joly has Hope; he's an optimist even among optimists, cheerful even when he's predicting Ultimate Doom. His belief in an essentially good universe is the core under everything else he does.
Bahorel would mostly be mad that the sorting system lacks so many important things, like Passion and Creativity, but he'd end up with Courage. There are other things that are really close for him--Sincerity, in particular--but the fact that his first reaction about that would be to want to fight about it pretty much sets him up here.
Gringoire doesn't care about any of that stuff except Knowledge, but he really does care about Knowledge.

Charles is all about Kindness, Knowledge and Love with Kindness is main one as he's defined again and again in canon by his compassion.
Quentin is Reliability and Friendship.
Will S. is Courage and Friendship.
William is I think Courage and Reliability.
Sameth is easily Knowledge, he always wants to know why.
Moist, hm, I think Knowledge is the closest for him.
Ivan is Reliability and Friendship.
Demeter is I think Love and Kindness.
Tumnus is definitely Kindness.

Cosette could either be Hope or Love, I think. I lean towards Hope, overall, but both could work.
Thor... is harder. Courage is the obvious one, and probably the one he'd pick for himself, but I'm not sure it's the truest? Love, Hope, Sincerity -- all those are very compelling. (Knowledge and Reliability are the only ones I can really discount. Sorry, buddy. You may be unreliable mostly because plot keeps drop-kicking you halfway across the galaxy, but the fact remains.) Anyway, I'm genuinely not sure, here! I think... I think I'm going to go with Love, because of how steadfast he is in his love for not just his family (SHUT UP LOKI HE LOVES YOU) but also Asgard and all his people, but it's REALLY hard between that and Sincerity.
Kazul is probably Knowledge, although you could make a case for Friendship.
And Doctor Dinosaur is gonna have to be Knowledge too, since there's apparently no Crest for Megalomania.

With Ahsoka I keep thinking Light. If you look at her and Anakin from a meta POV, she is the light Anankin could've been. There's also that whole thing with the Daughter (a manifestation of the Light Side of the Force) giving part of herself to Ahsoka so that Ahsoka might live. Ahsoka would likely chose Courage if she had a say in the matter.
Sabine...I'm torn between Friendship, Knowledge, and Kindness. She just has so many virtues, it's hard to pick one. I'll go with Knowledge as she keeps looking for answers and information to use against the Empire.
Hank, while it's tempting to say Knowledge, I'm going with Kindness. I think he is his best when he's using his mind and skills to help fellow mutants deal with their powers, which I think is the best change in the movies from his comic counterpart.
Scrapper, Courage. Definitely Courage. It's all she has left.
Tybalt is definitely Reliability. Even when he hated or disliked Toby, he stayed by her out of a sense of loyalty to...I think it was her mother? I can't recall whom Tybalt said was his reason for checking on Toby in the early books.

Everything gets discounted for Rose because of Thorn.
Kylo... erg. None of them really work. Possibly Sincerity, because he really, really believes in his cause, but even that's a stretch.
Tess likely falls under Courage, but Knowledge also works. I'm torn.

Garnet would be Love. She's constantly being created from the love and dialogue of Ruby and Sapphire, she sees that as driving everything she does, and she feels very strongly about it.
Fantine would be Courage. It's her most distinguishing and general trait. She does love Cosette overwhelmingly, but that's the result of a particular relationship, and not some general trait of Fantine's. She's kind and hopeful and sincere, but none of that is as striking as her persistent courage, IMO.
Combeferre would be Knowledge because he is passionate about learning all the things, though Kindness is a close second. He does die trying to save an opposing soldier.
Jehan Prouvaire would be Light. Kindness would be an even closer second for him--he's consistently sympathetic to others--but he's got some spiritual/religious associations in canon that make me go with Light.

Evelyn: Friendship, I think, due to how she holds the Inquisition together. Also can argue Hope, but that grows out of her holding all these disparate people together that creates that hope, other than the damned Rift ability, so I'm sticking with Friendship really.
Lois: Toss-up between Sincerity and Courage, I think--and she is Hope-adjacent, though not Hope herself--and I really will go for Sincerity, because yeah, she's brave and is always throwing herself into danger or confrontational situations, but it usually has to do with who she is inside and her sense of integrity that she really is incapable of turning from--including the times she'll lie for the sake of some other aspect of that integrity.
R2: Reliability. Knowledge could also be applicable, given the secrets he keeps and how he uses them, but... Reliability probably wins out.
Anakin: Courage. Because Anakin. Truthfully, Love is close behind, given what his deepest emotions are, but even though the perversion of Love works just as well as perversion of Courage for him and his Fall, I feel like Courage is the right choice here.
Tavi: Is complicated. Frankly arguments could be made fairly strongly for just about all of them with the exceptions of Kindness (he's... compassionate always and rarely unkind but like no he's just not that) and Light (because he just laughs hysterically at the notion of divine enlightenment--and, by the way, this is not as absurd as he thinks, but history's view of him and the reality Do Not Necessarily Mesh). But I think ultimately he has some nasty combination of Reliability and Hope that I cannot quite untangle because of how the 'Reliability' is of the job he literally makes his life into, but hope is what he gives people and what he can't quite let go of even despite his 'crying in the dark' moments, because he's sitting there planning a future for people that can be ever brighter. So like. Reliability and Hope are hard to separate, with him.
